GIN & TONIC CUPCAKES

A creamy frosting infused with gin is the crowning touch on luscious, lime-flavored cakes. The recipe comes from our own Test Kitchen.

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg yolks, water, oil, lime juice, zest and vanilla. Add to dry ingredients; beat until well blended., Add cream of tarter to egg whites; beat with clean beaters until stiff peaks form. Fold into batter., Fill paper-lined muffin cups three-fourths full. Bake at 325° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat the cheese, cream, confectioners' sugar, gin and food coloring until stiff peaks form. Pipe over cupcakes. Garnish with lime slices. Refrigerate leftovers.

1/4 teaspoon cream of tartar
FROSTING:
2 cartons (8 ounces each) Mascarpone cheese
2/3 cup heavy whipping cream
1/2 cup confectioners' sugar
1/3 cup gin
6 to 8 drops green food coloring
Lime slices

  • Place butter and sugar in a large bowl, and using an electric mixer, beat together until pale and fluffy, about 3-4 minutes. Add lime zest and mix again to combine. Add eggs, one at a time, along with 1 Tbsp of flour between each addition (it will prevent the batter from curdling), and mix on low speed until well combined. Fold in the remaining flour, followed by gin and tonic and mix together to combine, until you have smooth batter.
  • Divide the cupcake batter between the cases (fill 3/4 of each cupcake case with batter, leaving enough room for them to rise) and bake for 17- 20 minutes until the cupcakes have risen and are springy to the touch. Let them cool for 5 minutes, then remove from the tin and place on the cooling rack.
  • While the cupcakes are baking, prepare the syrup. Place all the ingredients in a small saucepan and bring to boil. Simmer the mixture for about 10 minutes, until all the sugar dissolved and it becomes a bit thicker. Remove from the heat and set aside.
