LINDY'S BACON AND ONION CHEESE SPREAD
This is a wonderful bacon and onion cheese spread (not dip) that is great for parties and year-round use. For Christmas, I shape this into a tree shape, on a flat tray. I sprinkle the trunk of the tree with crisp bacon and the tree itself with finely chopped green onion tops or chives. I have also shaped it into a cross for my children's confirmation parties, a Christmas stocking, and even a heart for a special Valentine's Day party. If you substitute creamy salad dressing for the mayonnaise it will not be the same. My mom tried that and it didn't turn out well. This is best made the day before and chilled. My family and friends all love this; it's one of those dishes that I have to make for every holiday and get-together.

- Cook the bacon in a large, deep skillet over medium-high heat, until evenly browned and crispy, about 10 minutes; drain on a paper towel-lined plate. Crumble once cool to the touch.
- Beat the cream cheese and mayonnaise together in a bowl until light and fluffy. Add the Parmesan cheese, most of the crumbled bacon, and most of the green onion into the cream cheese mixture, reserving just enough bacon and green onion for garnish; stir until all ingredients are evenly incorporated. Chill in refrigerator until slightly firm, 1 to 2 hours; shape the mixture into a ball and roll in the reserved bacon and green onions. Return to refrigerator until set, 8 hours or overnight.

BACON-WRAPPED PORK TENDERLOIN WITH BALSAMIC AND FIG
Adding fig preserves and balsamic vinegar to bacon-wrapped pork gives you the perfect sweet-salty combo of flavors that is impressive enough to serve guests. Best of all, it's ready in about 20 minutes. Be sure to use a tenderloin and not a loin - they are not the same size-wise and require very different cook times. I love to serve this with roasted Brussels sprouts and mashed sweet potatoes. Do not use thick-cut bacon, as it will not cook thoroughly.

- Combine onion powder, garlic powder, smoked paprika, salt, and pepper in a small bowl. Rub spice mixture all over the pork tenderloin and let sit at room temperature for 20 to 25 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Spray foil with cooking spray.
- On a clean work surface, lay bacon slices side by side, overlapping them slightly. Brush fig preserves on one side of the bacon. Place pork tenderloin on bottom end of the bacon slices and roll up so that tenderloin is wrapped in bacon. Place tenderloin, seam side down, on the prepared baking sheet.
- Roast in the preheated oven for 15 minutes and remove pork tenderloin from oven.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Brush balsamic glaze all over the pork and return to the oven to broil until pork is slightly pink in the center, 5 to 7 more minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Let rest for 5 minutes before slicing and serving

Steps:
- Brown bacon in a large skillet over medium low heat.
- Stirring often, render out 1 tbsp fat.
- Set aside large skillet.
- Place the 1 tbsp bacon fat into a medium skillet.
- Add onions and saute over medium heat for 5 minutes.
- Add cinegar, sugar pepper and salt.
- Cook and stir for 10 minutes.
- Place cooked onion mixture into the bacon in the large skillet.
- Cook bacon over low heat for 3 hours, stirring occasionally, until most liquid is absorbed.
- Remove from heat, puree, let cool
- Keep refrigerated for up to 3 weeks.
- Makes 2 cups.

GLAZED BACON
Betty Groff, the home cook turned proprietor of Groff's Farm Restaurant, once said that there were only two authentic American cuisines: Pennsylvania Dutch and Creole. Her brown-sugar-glazed bacon represents the former, and she occasionally served it as an hors d'oeuvre at her restaurant, which she started in her family's 1756 Pennsylvania Dutch farmhouse in Mount Joy in the late 1950s. The restaurant became a place of pilgrimage for food lovers, among them Craig Claiborne, who wrote an article about it in The New York Times in 1965. This recipe, which Ms. Groff said "will amaze every guest," serves six, but she noted that you can easily scale it up to serve 30, or possibly more.

- Heat oven to 350 degrees. Line a baking pan with foil; it should be large enough to hold the bacon in a single layer. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While bacon cooks, mix remaining ingredients together.
- Drain bacon fat from pan. Brush the bacon strips on both sides with the brown sugar mixture. Return bacon to the oven and cook another 10 minutes or so, until glaze is bubbling and darkened.
- Remove bacon from the oven and transfer to a cutting board or platter lined with foil or parchment paper. Let cool about 15 minutes. Bacon should not be sticky to the touch. Cut each strip in thirds and arrange on a serving dish.
