GLUTEN FREE 2 MINUTE FUDGE

I got this recipe from the first cookbook I ever owned,the Kids Microwave Cookbook. My brother bought me the cookbook for my birthday when I was quite young. As the title states this recipe is very quick and easy to make. This fudge recipe has always been one of my favorites and i'm sure it will soon be one of yours too.

Gluten Free 2 Minute Fudge image

Steps:

  • In a 1-1/2-quart casserole, stir together sugar, cocoa, salt, milk, and vanilla until partially blended.
  • Put butter or margarine over top in center of dish.
  • Microwave on HIGH power 2 minutes.
  • Stir well until smooth.
  • Pour into a greased 8-inch square dish. Chill about 1 hour.

4 cups powdered sugar
1/2 cup unsweetened cocoa
1/4 teaspoon salt
1/4 cup milk, minus 1 teaspoon
1 tablespoon vanilla
1/2 cup butter

All I have to say, is that I'm obsessed with this recipe... I've never tasted better fudge! It's so good... although it's VERY sweet and VERY rich! Prep time includes chill time.

2 Minute Microwave Fudge image

Steps:

  • Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl.
  • Stir in milk and vanilla.
  • Mix well.
  • Place butter on top.
  • Microwave on high, 2 minutes.
  • Beat with wooden spoon until smooth.
  • Stir in nuts (OPTIONAL).
  • Spread in 8 X 8 X 2 inch baking pan.
  • Chill about 1 hour or until firm.
  • Cut into 36 pieces.

1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)

Steps:

  • Mix milk, sugar and salt in a heavy saucepan, over med-high heat.
  • Heat to boiling.
  • Cook 5 minutes, stirring constantly.
  • Remove from heat, and add other ingredients.
  • Stir until marshmallows are all melted.
  • Pour into buttered 9" square pan.
  • Cool and cut into squares.

2/3 cup Carnation Evaporated Milk
1 2/3 cups white sugar
1/2 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups chocolate or 1 1/2 cups butterscotch chips
1 teaspoon vanilla

  • Thoroughly butter an 8-inch square baking pan. Line it with parchment paper cut to 8-inches wide by about 14-inches long. You want the parchment to hang over two of the edges to create a sling, which helps you lift the candy out of the pan later. Butter the parchment to guarantee easy release.
  • In a large (about 4-quart) saucepan with tall straight sides, stir together the evaporated milk, sugar, and vanilla until the sugar is completely moistened with no lumps remaining and the milk is fully incorporated. Attach a candy thermometer to the side of the pan being sure it is not touching the bottom of the pan.
  • Add the butter and bring to a boil over medium-high heat stirring often so the mixture doesn't scorch on the bottom of the pan. Once the candy is at a full boil, you can reduce the heat to medium, just be sure to keep the candy at a full boil. Continue stirring frequently until the mixture reaches 234°F (soft-ball stage) on the thermometer. NOTE: Making candy requires a reliable thermometer for accuracy. The temperature will risequickly at the beginning and then will slow down but continue rising steadily. Keep a close eye on it!
  • Once the candy reaches 234°F, remove the pan from the heat and remove the thermometer. Add the chocolate and marshmallow. Let it sit for a minute to start melting the chocolate, then briskly stir until the chocolate and marshmallow are fully melted and the mixture is smooth with no streaks. Stir in the nuts if using.
