I was having a serious craving for something sweet, but didn't want to make a huge amount of anything! I stumbled across the "mug cake" recipes, but all I had available was the King Arthur Gluten Free Flour mix I use when baking for my boss. So I tried it, and this worked beautifully! Steps:
- 1. Using a 12 ounce microwave safe mug, soften 1 tablespoon butter in the microwave. Just 10 seconds. Stir in sugar until creamy, then add sour cream and just a few drops of vanilla extract. Mix well, then add the gluten free flour mix and the baking powder.
- 2. In a separate ramekin or small bowl, combine crumb topping ingredients. Mix with your fingers until it resembles coarse crumbs. Add the crumb topping to the mixture in the mug.
- 3. Start with 1 minute on high, adding 10 seconds and checking until it looks done to you. My microwave is 1100 watts, and it took 1 minute 20 seconds for this cake to cook. HERE IS THE IMPORTANT BIT! It's going to be very hot when you take it out of the microwave, so let the cake sit for a minute and cool down. Then go ahead and dig in!

- Spray a large (12 ounces) mug with nonstick cooking spray. Stir together gluten-free flour, sugar, and baking powder in the mug. Add egg, oil, milk, and vanilla extract. Stir until smooth with a fork or mini whisk. Stir in sprinkles if using.
- Preheat oven to 350 degrees. Follow step one above. Be sure to use an oven-safe mug. Place mug on a baking sheet. Bake until set, about 20 minutes.
- Beat together the butter and powdered sugar until smooth with a spoon. Add milk. Mix until creamy. Spread frosting on cooled cake. If you put the frosting on the hot cake, it will melt.

- Pour a few drops of oil into each mug (approx half a teaspoon) and use a piece of kitchen towel to grease the mug, ensuring the bottom and sides are covered. Set aside.
- In a bowl beat the egg, flour, sugar, oil and vanilla extract until combined using a fork or spoon. Pour the mixture evenly between the two cups.
- Microwave each cup (one at a time) for 70 seconds. This time may vary depending on your microwave - see notes. Once each cup is done, leave to stand for 30-60 seconds.
- Using a sharp, thin knife, gently cut around the edge of each cake to loosen it from the sides of the mug. Then flip it upside down firmly. The cake should come out as your lift the mug. Leave to cool for a couple of minutes while you make the frosting.
