Golden Corn Soup image

Steps:

  • In a large saucepan, over medium-low heat, melt butter; add onion, red and yellow peppers and cook for 5 minutes, stirring often.
  • Add flour, stir constantly until well combined.
  • Add broth, corn, saffron, cream, salt, white pepper, and 1 tbsp parsley.
  • Cover and simmer for 15 minutes, stirring occasionally.
  • Serve with chopped fresh parsley on top.

4 tablespoons butter
1 large onion, chopped
1 red pepper, cored and diced
1 yellow pepper, cored and diced
4 tablespoons flour
4 cups vegetable broth (or chicken broth)
16 ounces frozen corn kernels, thawed (or about 4 ears of fresh corn kernels)
1/8-1/4 teaspoon saffron thread
1 cup half-and-half
1/4-1/2 teaspoon salt
1/4 teaspoon white pepper
1 tablespoon chopped fresh parsley
1 -2 tablespoon chopped fresh parsley, for garnish

Steps:

  • 1. Bring the stock to a boil.
  • 2. Beat the egg whites until frothy.
  • 3. Add milk.
  • 4. Add corn to the stock and salt to taste.
  • 5. When the mixture has returned to a boil, stir in cornstarch mixture.
  • 6. Remove from heat and immediately add egg mixture. Stir quickly in one direction to create egg threads in the soup.
  • 7. Garnish with ham, shrimp, and/or green onions if desired.
  • 8. Serve.

3 c chicken stock
2 large ears of corn, or 1 8-ounce can creamed corn
1/2 tsp salt
2 egg whites
2 Tbsp milk
1 Tbsp cornstarch, dissolved in a little cold water
chopped ham. optional
chopped shrimp, optional
chopped green onions, optional

  • Reduce heat and simmer.
  • Beat the egg whites until frothy; add milk; set aside.
  • Add corn to the stock and salt to taste.
  • When the mixture has returned to a boil, stir in cornstarch mixture.
  • Remove from heat and immediately add egg mixture.
  • Garnish with ham, shrimp, and/or green onions if desired.
  • Serve.

  • Heat oil in a large saucepan over medium heat. Add shallot and cook, stirring, 1 minute. Add squash and 1 teaspoon herbs and cook, stirring occasionally, until the squash starts to soften, 3 to 5 minutes.
  • Add broth and salt; bring to a boil. Reduce heat to a simmer and cook until the squash is soft and mostly translucent, about 5 minutes more. Transfer to a blender and puree until smooth. (Use caution when pureeing hot liquids.) Return the soup to the pan and stir in corn. Bring to a simmer over medium heat and cook, stirring occasionally, until the corn is tender, 3 to 5 minutes more. Remove from the heat; stir in lemon juice. Serve garnished with the remaining 2 teaspoons herbs and feta.
