GOOEY CARAMEL SAUCE
This caramel is very rich and gooey. It can be thinned with a little water to make a sauce for ice cream or it can be used as-is for a gooey candy filling. Great with apples too! Recipe can be doubled. Because the sugar can turn from caramel to burned rather quickly it is best to have all ingredients measured before starting.

Steps:
- Heat 1/4 cup sugar in a stainless saucepan on medium heat, do not stir until sugar begins to melt.
- Once sugar begins to melt, stir it until it has completely melted and begins to turn golden brown.
- When sugar has started to turn caramel colored, remove pan from heat and immediately add butter and brown sugar and quickly stir together.
- Once the butter and brown sugar are completely melded with the caramel (add gentle heat if needed to incorporate brown sugar), add the vanilla, corn syrup, cream and salt.
- Stir together well.
- The caramel will thicken as it cools.
- If a thinner caramel is required, add water one tablespoon at a time until the desired thickness is reached; if a thicker caramel is needed, reduce the amount of corn syrup used.

- Grease a 9x13-inch baking dish.
- Arrange 12 dinner rolls in the prepared baking dish.
- Melt butter in a saucepan over medium-low heat. Add brown sugar, pudding mix, milk, and cinnamon to melted butter; stir until smooth. Pour pudding mixture over rolls; top with remaining 12 rolls. Allow rolls to rise for 3 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in the preheated oven until rolls are cooked through, 30 to 35 minutes. Cool for 15 minutes before serving.

TOO EASY GOOEY CARAMEL ROLLS
Easy, easy, easy! I can't count the compliments I've received from these. I used to take three of them to bake sales when I worked. They always sold first! They just look so yummy, people think you just had to work very hard and long on them! I got this recipe from my mom at least 30 yrs ago and my family has enjoyed them ever since! I was out of pecans once and the kids begged for them so I made them anyway and they were almost as good. If you have a timer on your stove, you can set it for the baking time to begin and end. The wonderful aroma will wake you up! Set your alarm anyway,,don't want to ruin a good thing! I hope this becomes a family favorite of yours too. Also, the first time you make them, watch them closely not to over or undercook the rolls. use 1 large round platter or pizza pan covered with foil. They look awesome on a fancy platter

- All this is done the night before: spray your bundt pan well and place evenly the frozen rolls in pan. Sprinkle the dry butterscotch pudding (instant will not work) evenly on top of rolls and sprinkle pecan pieces over pudding powder (add pecans 2nd, not last).
- Heat the butter to just melted, not hot in microwave and stir in brown sugar. If the butter is too hot, the brown sugar will separate and be hard to blend together pour brown sugar/butter syrup over rolls evenly.
- That's it!
- Place bundt pan in the cold oven overnight.
- When you arise the next morning, set the oven temp to 325°F
- Check the rolls FIRST before turning oven on to see if they rose over the top of the bundt pan. If they did, push the rolls hanging over back GENTLY.
- Don't remove rolls while the oven is heating, leave inches.
- Bake about 25 minutes until rolls seem firm on top and done in the middle, but don't over bake.
- Remove bundt pan from oven and let cool 5-10 minutes in pan (I usually wait only 5 minutes).
- Have ready a platter or pizza pan (holes covered) big enough to hold the rolls being careful not to burn yourself, place platter over the top of Bundt pan and quickly invert.
- Do this over the counter top so if some spills, it won't get on the floor.
- All that's left is to enjoy!
- Company or family will think you slaved hours, it looks so yummy.
- This is great for bake sales also.
- Tip: don't put over 22-24 at most rolls in the pan.
- I always use just 22.
- Any more and they will rise over the top of the pan and hang over.
- If this happens, while rolls are cooling, carefully push back the edges of the rolls and gently push down on the top of them.
- I use more butter and sugar than other recipes because my family really likes alot of caramel.
- However, you could cut back the butter to 1/2 stick and the sugar 1/2 cup.
- I just prefer too much to too little.
- The caramel can be scooped up and put toward the middle rolls.

I make this delicious caramel all the time for hubby. He's gotta have it on his ice cream. Easy, just make sure you don't burn the sugar on the first step! Recipe can easily be doubled. Enjoy!

- In a heavy bottom 2 quart sauce pan, add sugar. Cook over medium high heat and when sugar starts melting, start whisking sugar. You will notice some lumping up of sugar, just keep whisking until sugar becomes an amber color. Be very careful not to burn.
- Add butter and whisk until melted and combined, it will bubble up some.
- Turn off burner and whisk in the cream, thoroughly. Stir in 1/2 tsp vanilla and salt. Cool for 10 - 15 minutes, then pour into a hair or lidded container. Refrigerate, will keep for 3 weeks.
- Delicious over ice cream or cheesecake!

- Bring the cream to a boil in a 1-quart saucepan over medium heat.
- Cook the sugar, water, and honey in a 3-quart heavy-duty saucepan over high heat until the mixture comes to a boil. Brush around the inside of the pan with a damp pastry brush at the point where the sugar syrup meets the sides of the pan. Do this twice during the cooking process to prevent the sugar from crystallizing.
- Cook the mixture over high heat, without stirring, until it turns amber colored, 6-8 minutes. Lower the heat to medium and slowly add the hot cream to the sugar mixture while stirring constantly. The cream will bubble and foam. Continue stirring to make sure there are no lumps. Remove the saucepan from the heat and stir in the butter until it is completely melted. Then stir in the vanilla.
- Transfer the caramel sauce to a bowl, cover tightly with plastic wrap, cool slightly, and serve warm.
