Ooey-Gooey Marshmallow Brownies image

Steps:

  • Preheat oven to 350 and grease 8x8 pan.
  • Melt unsweetened chopped chocolate, chocolate chips, and butter in a saucepan on very low heat. Stir together and cool slightly.
  • Beat together eggs, sugar, and vanilla in a large bowl.
  • Beat in chocolate mixture.
  • Mix flour, salt, and baking powder in a separate bowl.
  • Stir into chocolate mixture until just blended. Stir in mini-marshmallows.
  • Spread batter evenly in pan. Bake for 30 minutes.
  • Transfer pan to wire rack and cool completely before cutting the brownies into squares.

MARSHMALLOW BROWNIES

These brownies are the all time favorite at our house and everyone else loves them too. The recipe originally came from a '97 TOH but I have made it so many times for so many people that it's known as "my" recipe, wish I had made it up! My only suggestion is don't let them over cook.

Steps:

  • In a small saucepan over low heat, melt butterscotch chips and butter.
  • Remove from heat and cool for 10 minutes.
  • In a mixing bowl, beat eggs, brown sugar and vanilla.
  • Add butterscotch mixture and mix well.
  • Combine flour, baking powder and salt.
  • Add to batter and mix well.
  • Stir in marshmallows, chocolate chips and nuts.
  • Spread into a greased 13X9 baking pan.
  • Bake at 325 degrees for 25-30 minutes or until brownies test done.
  • I watch for the sides to pull away from pan and it is"set" when the pan is jiggled back and forth.
  • The toothpick test works but not as well as the other because of the marshmallows.
  • Cool completely before cutting into bars.

Steps:

  • Melt butter on low in saucepan. Stir in cocoa and set aside.
  • Beat together eggs, sugar, and vanilla.
  • Mix in butter and cocoa mixture.
  • Mix in flour and salt.
  • Pour in a 9x13 baking dish and bake for 30-35 minutes.
  • Meanwhile, mix together frosting ingredients, all except the hot water.
  • Once the brownies have baked, remove from the oven and cover with mini marshmallows. Return to oven until marshmallows have swollen just a little.
  • While brownies are in the oven, add enough hot water to the frosting to make it pourable. A few tablespoons should be enough. Mix until there are no lumps.
  • Take brownies from the oven and pour frosting on top. You have to do this while the brownies are still very hot or the frosting won't sink inches Let brownies cool before cutting. Enjoy!
