GRANDMA'S BEST LAZY DAISY OATMEAL CAKE
Oatmeal and brown sugar makes this cake sweet, yet comforting. After you bake the cake, spread a homemade caramel frosting on top to make it even more delicious. Steps:
- 1. Pour water over oats and cover and let stand 20 minutes. Beat butter til creamy,gradually add sugar and beat til fluffy. Blend in eggs,vanilla and oats and mix well.
- 2. Add flour, baking soda,salt,cinnamon and nutmeg to creamy mixture. Mix well. Pour into greased and floured 9" pan. Bake at 350 degrees F for 50-55 minutes
- 3. CARMEL FROSTING: Cook sugar and cream until it forms a soft ball. Add vanilla and butter. Cool. Beat til consistency to spread.

- In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine frosting ingredients; spread over warm cake. Broil 4 in. from heat until lightly browned, about 3-4 minutes.

- Preheat oven to 350.
- Cake:.
- In a shallow bowl, combine rolled oats and boiling water. Let stand for 20 minutes.
- Using a mixer, cream butter until creamy.
- Gradually beat in sugars, and beat until light.
- Blend in eggs and vanilla.
- Mix flour, baking soda, salt, and spices.
- Remove beaters from creamed mixture.
- Stir in rolled oat mixture.
- Fold in flour mixture. Blend well.
- Pour batter into a greased and floured 9" square cake pan.
- Bake for 45-55 minutes Remove from oven, but DO NOT REMOVE CAKE FROM PAN.
- Topping:.
- Combine all melted butter. brown sugar, canned milk and nuts. Spread over the hot cake.
- Return the cake to the oven, under the broiler. Broil until the topping is bubbly and tinged with gold. Watch it as it will burn easily.

- 1. Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature). Combine sugars,oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well. Pour into sprayed 9x13-inch cake pan. Bake in 350^ oven for 40-50 minutes. --- Frosting: In a small saucepan combine butter,sugar and milk, heat to boiling. Remove from heat add vanilla, coconut and pecans. Spread on cake while it is still warm.
GRANDMA'S LAZY DAISY CAKE
This was and still is my mom's favorite cake while she was growing up. Everytime my mom comes to visit me I always have this made for her.

- Beat eggs and add sugar until fluffy.
- Sift flour, salt and baking powder.
- Add to egg mixture and mix until well combined.
- Heat milk and butter to boiling point, add to batter and add vailla.
- Beat slightly.
- Pour into a greased 8x8 pan. Bake at 350 for 30 minutes.
- When done add topping right away.
- Topping.
- Mix brown sugar, milk, butter, coconut and nuts in a pot on stove until suagr has dissolved.
- Put on cake.
- Put back in the oven on broil until very light brown on the top.
- Remove from oven and cool completely before serving.

- Pour water over oats, let stand.
- Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
- Pour batter into a 9 x 13 inch pan.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
- To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
- Pour this coconut concoction over the hot cake.
- Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

- 1. Beat eggs until thick & lemony. Add sugar, flour & baking powder. Bring milk and butter to boiling point and add to dry mixture. Pour in a SMALL oblong or 9" square pan. Bake at 350 for 20-30 minutes.
- 2. While cake is baking, heat together all Topping ingredients. Pour over cake immediately when removed from oven. Put under oven broiler until topping is light to medium brown. Serve while still warm. :)
