ARAKAS LATHEROS (GREEK PEAS WITH TOMATO AND DILL)
Peas are normally considered a side dish, but in Greece it is common to eat a plate full of vegetables as a main course. This traditional way of cooking peas is so satisfying and healthy, it will most certainly become a favorite. Serve with crusty bread and feta for the ultimate meal!

Steps:
- Heat olive oil in a saucepan over medium heat and cook onions until soft but not browned, about 5 minutes. Add peas, tomatoes, potato, dill, salt, and pepper. Add water if there is not enough liquid from the tomatoes.
- Stir thoroughly and bring to a boil. Lower heat and cook, partially covered, until peas and potato are soft, about 30 minutes. Ensure that any remaining water from the tomatoes has evaporated before serving.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking dish with 1 tablespoon butter. Sprinkle 1 tablespoon sugar into buttered dish.
- Rub remaining 1 tablespoon butter over pear halves; arrange pears cut sides down in prepared baking dish and sprinkle with remaining 1 tablespoon sugar.
- Bake in preheated oven for 10 minutes. Pour cream over pears and continue baking until tender, about 20 minutes more.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.

GREEK BAKED PEARS
My daughter teaches Home Economics and Latin at a Private School. She recently had to do a History Banquet where her Home Ec Class had to prepare and serve for the First Grade Class and the theme was a Greek theme because it is a Classical School. We were struggling with what to come up with for everything. After coming up with Lentil Soup, Hummis and a Chicken Wild Rice Casserole, I finally helped her with this. I invented this Baked Pear. Not only is it good but healthy. No sugar added. We were trying to stay authentic so we used no real sugar. It's really very good. We had lots of raves and we served it with real cream at the bottom. Not whipping cream because they had no way to whip it but you could whip yours because we do have whipped cream today.

- Before you start, either spray your pan with cooking spray or foil it so the honey won't stick to the pan where it's hard to clean later. Set your oven at 325 degrees. Core your pears making a hole in the middle where you can have room to add ingredients. Using a pastry brush, paint all of the pears with lemon juice. This keeps the pears from turning dark and it also gives them an added boost of flavor. Cut a tiny piece from botton so the pears do not slide all over the pan and this will help them stay stable. Do not cut much as you do not want to loose much of your pear. Also, do not cut much from the middle when you core as you do not want to lose much of your pear then as well. Remember, a pear isn't that big. So, now that you have your pear painted with lemon and on the prepared pan, you are ready to begin stuffing. Chop your figs if they are not already chopped and put some in each cavity. Take about one teaspoon of oats and top on the pear and then slice a very thin slice of butter and lay on each top of the oats. After that you need to make up your honey mixture. You take a bowl and pour a liberal amount of honey into it and add lots of cinnamon to taste. The honey should look dark brown. Taste it at this point. It will no longer taste like honey but a beuatiful cinnamon mixture. Taste until you love the taste. Take and drizzle liberally on each pear. This and the figs are your sweetener for this. Then sprinkle almonds on to the honey mixture so they will stick. After this, put it in the oven for around 30 minutes or until pears are fork tender. Serve with fresh cream. It will taste amazing and it is all naturally sweet. Just make sure that you have used foil or coated the pan with cooking spray because honey really sticks when cooked. This tasted very amazing. We had so many compliments.
CARDAMOM PEARS OVER SPICED YOGURT
Steps:
- Heat a grill pan over medium-high heat. Halve and core the pears and place them cut-side down on paper towels until ready to use.
- Mix the brown sugar, ginger, cardamom, cloves and salt in a small bowl. Turn the pears cut-side up and sprinkle them each with a teaspoon of the mixture.
- Brush the grill pan with the coconut oil and place the pears cut-side down on the grates. Cook until grill marks appear, 3 to 4 minutes. Remove the pears to a plate. Mix the remaining spice mix into the yogurt. To serve, add about 1/2 cup yogurt to a bowl or plate, then add 2 pears halves and sprinkle with a couple small mint leaves. Serve immediately.
EASY BAKED PEARS WITH AMARETTI

- Cut each pear in half, then place on a large baking tray. Use a teaspoon to scoop out the cores and make a dip in the centre of each pear. If your pears are firm, you may need to use a sharp knife to do this. Dollop about 1 heaped tsp ricotta into each dip, then sprinkle over the cinnamon and drizzle with a little honey.
- Heat oven to 190C/fan 170C/gas 5, then roast the pears for 10 mins. Tip the biscuits into a food bag and use a rolling pin to lightly crush them. Remove the pears from the oven, then scatter the crumbs over each pear. Return to the oven for another 10 mins or until the pears are soft and the biscuit golden brown. Serve drizzled with honey.

- Preheat oven to 375°F (190°C). I don’t line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
- Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. Sprinkle evenly with cinnamon– feel free to add more cinnamon if you’d like.
- Whisk the maple syrup and vanilla extract together in a small bowl. Drizzle most of it all over the pears, reserving about 2 Tablespoons for after the pears are finished baking.
- Bake pears for about 25 minutes until soft and lightly browned on the edges. Remove from the oven and immediately drizzle with remaining maple syrup mixture. Serve warm with granola and yogurt. Store leftovers in the refrigerator for up to 5 days.
