  • In a bowl, toss the greens, olives, onion, peppers, cabbage and cheese. Serve with dressing.

6 cups torn salad greens
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small red onion, halved and sliced
1/2 cup chopped sweet red pepper
1/2 cup chopped sweet yellow pepper
1/2 cup shredded red cabbage
1 cup shredded part-skim mozzarella cheese
1 to 2 cups Italian salad dressing or dressing of your choice

JICAMA CONFETTI SALAD

This lovely salad is a crunchy and refreshing blend of jicama and colorful fresh vegetables that will light up a simple dinner. Jicama is a crunchy, slightly juicy vegetable that tastes like a cross between an apple and a raw potato. It is native to Mexico, and it is also prominent in Asian cuisine. It's just really tasty, to me!

Jicama Confetti Salad image

Steps:

  • Combine jicama, red onions, carrots, red bell pepper, celery, and green onion in a large bowl. Sprinkle white sugar over the vegetables, stir well, and refrigerate for 20 to 30 minutes.
  • Combine rice wine vinegar, oil, fish sauce, honey, lime juice, and Sriracha in a jar with a lid. Close the lid and shake vigorously. Season vinaigrette with salt and pepper.
  • Remove salad ingredients from the refrigerator, sprinkle with minced almond slices and cilantro, and toss with the vinaigrette. Garnish with cilantro leaves and serve.

  • In a bowl, toss together corn, lima beans, green beans, tomatoes, onion, avocado, jalapeño and basil. In a second bowl, whisk together oil, vinegar, honey, salt and pepper. Confetti Greek Pasta Salad image

Steps:

  • For Salad Dressing:.
  • Good Seasons Garlic & Herb Dressing prepared to package directions except:.
  • substitute 1/2 cup flax seed oil for regular oil if you have it.
  • Add 1-2 teaspoons of finely ground black pepper.
  • Add 1 large clove of garlic sliced very thinly and diced finely.
  • Omit 3 Tablespoons of water.
  • Use Pompeian Red Wine Vinegar. It makes all the difference!
  • To begin:
  • Cook pasta Al Dente, rinse and drain well!
  • Lubricate pasta with dressing to taste.
  • Dust with parmesean and Poppy Seeds; toss well.
  • Add Peppers and onions and toss.
  • Add Feta and toss!
  • Taste and adjust seasonings:).
  • Refrigerate overnight so flavors can mingle.
  • Note: This is very good with whole wheat pasta, and any garden veggie you can imagine. Olives too.

  • Chop all of the vegetables. My mood detemines the size. Most times they are all diced to between 1/4 and 1/2 inch.
  • Mix all veggies with black pepper, salt, and garlic powder.
  • Add olive oil, lemon juice, red wine vinegar.
  • Adjust the olive oil, lemon juice and red wine to your tastes.
  • Refrigerate for 1/2 hour to let flavors blend.
  • Prior to serving, taste and readjust salt and pepper to taste.
