Steps:

1. Sauté onions and garlic lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender. Note: try adding garlic and cumin. You can add 1 1/2-2 inch cubes of lamb shoulder sautéed with onion and garlic and make the recipe into a stew
2. Fasoulakia Yiahni is the Greek name of this traditional dish. We like to top with some crumbled feta cheese. Yum.

Steps:

Place the green beans in a pot, and mix in the lemon juice, onion, olive oil, tomatoes, tomato sauce, parsley, water, salt and pepper, and bay leaf. Cook 45 minutes over medium heat, stirring occasionally, until sauce is thickened. Remove bay leaf before serving.

Steps:

Heat oil in a large skillet over medium high heat.
Add garlic to pan; saute 30 seconds, stirring constantly.
Add potato, celery, salt, and beans; saute 1 minute.
Add 1/4 cup water; cover and cook 5 minutes.
Add cilantro or parsley, and tomatoes.
Cover, reduce heat, and cook 4 minutes or until tomatoes begin to soften, stirring occasionally.
Stir in pepper.

To prepare this traditional Greek green beans recipe, start by washing thoroughly the green beans. Drain them in a colander and set aside.
Heat half the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until transculent and tender. Stir in the garlic, the grated tomatoes, the rest of the olive oil and a pinch of sugar and bring to the boil. The traditional recipe for Greek green beans calls for fresh ripe tomatoes, but if you like you can substitute with canned chopped tomatoes, or Passata tomato juice.
Add the green beans and blend well, so that the green beans are coated with the olive oil and the tomatoes. Turn the heat down, cover with the lid and simmer for 40- 45 minutes, until the beans are soft and most the juices have evaporated. During cooking, check out if the pan appears to be getting dry and add a little bit hot water if needed.
