Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cook, covered, for 10-15 minutes or until crisp-tender., Meanwhile, whisk the vinegar, oil, mustard, salt and pepper in a small bowl. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss to coat. Sprinkle with cheese.

Simple Roasted Green Beans image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Brush a roasting pan with olive oil.
  • Place beans and onion in the roasting pan. Drizzle on olive oil and sprinkle with salt and pepper.
  • Roast in the preheated oven, stirring only once or twice, until beans are tender-crisp, about 30 minutes. Top with Parmesan cheese. Serve immediately or once cooled to room temperature.

Fresh Green Beans with Heaven Sauce image

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 2 to 6 minutes.
  • Melt butter in a saucepan over medium heat; cook and stir onion and garlic for 2 minutes. Add sesame seeds; cook and stir until sesame seeds are golden brown, 3 to 5 minutes.
  • Mix soy sauce, mayonnaise, sriracha hot sauce, and allspice into onion mixture. Add green beans and toss to coat; season with salt and pepper.

Green Beans with Roasted Chestnuts in a Dijon Sauce image

Steps:

  • VARIATIONS: 1- Add 30 ml (2 tbsp) white wine vinegar to sauce.
  • 2- Replace the chestnuts with grilled almonds or hazelnuts.
  • Preheat oven to 160C (325F).
  • Roast chestnuts thusly: cut a small cross into the base of each chestnut, place on a cookie sheet and cook until the chestnuts start to open, about 45 minutes.
  • Remove from oven and let cool.
  • Meanwhile, cook the green beans in salted, boiling for two minutes, plunge into iced water and drain thouroughly.
  • Place in a serving dish and set aside.
  • Cook green onions and garlic in olive oil and butter until softened bit not golden.
  • Set aside.
  • Peel and quarter roasted chestnuts.
  • Sprinkle over green beans.
  • Combine the green beans and mustard, pour over green beans and chestnuts.
  • Add salt and pepper to taste.

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
