GREEN TOMATO CASSEROLE

I love the tangy taste of fried green tomatoes, but they are, well...fried! And messy to make. I developed this recipe to help assuage my hunger for fried green tomatoes, and yes, it does the job quite well. Without all the grease and batter, the tangy taste of the tomato can really shine through!

Green Tomato Casserole image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix green tomatoes, celery, green onions, and cilantro together in a 2-quart casserole dish. Whisk soy sauce, olive oil, brown sugar, vinegar, black pepper, salt, and red pepper flakes together in a bowl; pour over vegetable mixture. Toss to coat.
  • Bake in the preheated oven until vegetables are tender, about 45 minutes; stir about 20 minutes into cooking to redistribute sauce.

6 green tomatoes, cut into 1-inch cubes
3 stalks celery, cut into 1/2-inch pieces
16 green onions (white and pale green parts only), chopped
1 bunch cilantro, chopped
5 tablespoons soy sauce
¼ cup olive oil
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon red pepper flakes

SAUSAGE MACARONI BAKE

Everyone's bound to want seconds of this satisfying Italian-style bake from Kelli Bucy of Red Oak, Iowa. Oregano seasons the pork sausage, macaroni and tomato sauce mixture that's topped with a sprinkling of Parmesan cheese. "It really hits the spot when you want a quick not-so-big-meal," Kelli suggests.

Sausage Macaroni Bake image

Steps:

  • Cook macaroni according to package directions; drain and set aside. In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the green pepper, onion, oregano and pepper. Stir in tomato sauce and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Stir in macaroni and 2 tablespoons cheese. Transfer to an ungreased 1-qt. baking dish. Sprinkle with the remaining cheese. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

Green Tomato Casserole image

Steps:

  • Arrange one layer of tomatoes in the bottom of 1 ½ quart casserole.
  • Sprinkle with sugar, salt and pepper 1/3 of bread crumbs and 1/3 cheese.
  • Repeat layers twice omitting the cheese from the top.
  • Dot butter over the bread crumbs on top.
  • Cover and bake at 400 degrees for one hour.
  • Add remaining cheese, bake uncovered until cheese melts.

4 medium green tomatoes, sliced thin
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
2 cups soft breadcrumbs
1 cup of shredded sharp cheddar cheese
1 tablespoon butter, soften

This is a very simple recipe that tastes great. Put your beans on in early morning and let them cook all day. Handed down by my Grandma who came from a pretty poor family. Goes great with cornbread.

Steps:

  • Place the green beans in a large saucepan with a lid or a slow cooker. Pour water over the beans to cover; stir in salt. Bring to a boil over medium heat, reduce heat to low, cover, and simmer until the beans are very tender, 3 to 4 hours; add water throughout the cooking time as needed to keep moist.
  • Add the smoked sausage and potatoes; cover and simmer until the potatoes are very tender and the beans and potatoes have absorbed the smoky flavor of the sausage, about 2 more hours.

  • To a large casserole or baking dish (about 9 x13-inch), drizzle 1 tbsp of the olive oil on the bottom. Add the onion, garlic, tomatoes, and chicken sausage, then sprinkle the Italian seasoning on top and mix it all together. Create a well in the center and place the cream cheese in it.
  • Drizzle remaining olive oil on top and place in the oven for 35 to 40 minutes. When top of the cream cheese is lightly browned and tomatoes have blistered, remove from oven and add the spinach. Mix the spinach and cream cheese into the other ingredients until uniformly combined. Let sit 5 minutes to allow spinach to wilt.
  • Serve warm over pasta, with sliced bread, or a side salad for a lower carb option. Add salt/pepper to taste.
