GRILLED FRUIT SKEWERS WITH CHILI AND LIME

Grilled Fruit Skewers with Chili and Lime image

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Grilled Kiwi-Chicken Kabobs with Honey-Chipotle Glaze image

Steps:

  • Combine garlic, lime juice, oil and salt. Add chicken and kiwi; turn to coat. Refrigerate, covered, up to 30 minutes., Mix honey and chipotle peppers. Drain chicken and kiwi, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread chicken and kiwi. , Grill, covered, on an oiled rack over medium heat, turning occasionally, until juices run clear, 10-12 minutes. During last 4 minutes, baste frequently with honey-chipotle mixture., Serve with fresh lime juice and rice if desired.

Grilled Fruit Kabobs with Honey Lime Yogurt Dip image

Steps:

  • Heat grill to medium-high and make sure grate is clean.
  • Thread chunks of washed, peeled or seeded fruit onto skewers. If using bamboo skewers, soak in water for 10 minutes to minimize chances of burning.
  • Grill for 3 to 4 minutes per side, turning carefully so fruit does not fall off of skewers.
  • Remove from heat and serve with dip.
  • For dip: Combine yogurt, honey and lime zest and stir until well blended. Keep chilled until serving time.

Skewered Grilled Fruit with Minted Yogurt Honey Sauce image

Steps:

  • Prepare grill for cooking.
  • Stir together yogurt, honey, lime juice, and mint in a small bowl and chill until ready to serve.
  • Thread about 4 pieces of fruit onto each skewer. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill fruit in batches on lightly oiled grill rack, turning once, until browned and slightly softened, about 5 minutes total. Serve fruit on skewers with sauce on the side.

For sauce
12 oz (1 1/2 cups) nonfat plain yogurt
3 tablespoons honey
2 tablespoons fresh lime juice
3 tablespoons finely chopped fresh mint
For skewers
4 firm-ripe plums, each cut into 8 wedges
4 firm-ripe peaches, peeled and each cut into 8 wedges
1/2 ripe pineapple (1 1/2 lb), peeled, cored, and cut into 1-inch pieces

  • Mix honey with lime zest and juice in a large bowl. Toss fruit in honey mixture, cover and let sit for 10 minutes. Put the fruit on the skewers, alternating between pineapple and strawberries. Place the skewers on the grill, about a minute on each side.
