GRILLED SWORDFISH WITH SALSA FRESCA

Grilled Swordfish with Salsa Fresca image

Steps:

  • Add the tomatoes, jalapeño, onions, cilantro and lime juice to a bowl and mix to combine. Add 2 tablespoons olive oil and season with salt and pepper. Let sit at room temperature for at least an hour for all the flavors to come together.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Drizzle the swordfish with olive oil and sprinkle with salt and pepper on both sides. Place on the direct-heat side of the grill and cook until nicely charred, 2 to 3 minutes per side. Move to the indirect-heat side of the grill, close the lid and cook until cooked through, another 3 to 4 minutes. Remove from the grill to rest, about 5 minutes. Serve the swordfish with the salsa spooned over the top.

2 heirloom tomatoes, small dice
1 jalapeño, minced (ribs and seeds removed if you'd like less heat)
1 small red onion, minced
1/4 cup chopped fresh cilantro
Juice of 2 limes
Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
4 swordfish steaks, skin and bloodline removed

Herb-Marinated Grilled Swordfish image

Steps:

  • Whisk olive oil, lemon juice, soy sauce, parsley, garlic, dill, and pepper together in a large glass or ceramic bowl. Add swordfish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours; the longer you marinate the fish, the stronger the flavor will be.
  • When ready to cook, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove swordfish from the marinade and shake off excess. Discard the remaining marinade.
  • Cook swordfish on the preheated grill until fish is tender and flakes easily with a fork, about 4 minutes per side. Swordfish cooks very quickly and your grill will flare up with this marinade!

  • In a glass baking dish, combine the garlic, white wine, lemon juice, soy sauce, olive oil, poultry seasoning, salt and pepper. Mix just to blend. Place swordfish steaks into the marinade, and refrigerate for 1 hour, turning frequently.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill swordfish steaks for 5 to 6 minutes on each side. Garnish with parsley and lemon wedges.

Grilled Swordfish with Coriander Lime Butter image

Steps:

  • Make Grilled Swordfish:
  • Prepare grill.
  • In a small bowl together butter, zest, 1 teaspoon lime juice, garlic, coriander, and salt and pepper to taste.
  • Rub both sides of swordfish steaks with remaining 2 teaspoons lime juice and season with salt and pepper. Grill swordfish on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 3 to 4 minutes on each side. (Alternatively, swordfish may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Top each swordfish steak with a dollop of coriander lime butter and serve with grilled onions.
  • Make Grilled Spiced Red Onions:
  • Prepare grill.
  • In a small bowl stir together oil, cumin, cayenne, and salt and pepper to taste.
  • Brush both sides of onion slices with oil mixture and grill on an oiled rack set 5 to 6 inches over glowing coals until well-charred and tender, 2 to 3 minutes on each side. (Alternatively, onion slices may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • Separate onion slices into rings. In a bowl toss onion rings with lime juice and season with salt and pepper.
  • Serve with grilled fish, meat, or poultry.

1 1/2 tablespoons unsalted butter, softened

GRILLED SWORDFISH CLUB

This was on Bar Americain's lunch menu on opening day, and in the years since then it's become a staple for the lunch crowd. I first started serving a swordfish club at Mesa Grill years ago, and its popularity prompted me to redesign the sandwich with a more distinctly American feel. Creamy avocado slices add a nice touch of richness to the lean, meaty swordfish. Juicy tomato, peppery watercress, and a fresh lemony mayonnaise complete this vibrant sandwich. Serve with Barbecued Potato Chips (page 163) and pickled carrots and okra if desired.

Grilled Swordfish Club image

Steps:

  • Preheat the grill to high or heat a grill pan over high heat. Brush the fish on both sides with the oil and season with salt and pepper. Grill until golden brown on both sides and just cooked through, about 4 minutes per side. Remove and let rest for a few minutes.
  • Grill the bread on both sides until lightly golden brown, about 30 seconds per side. Lay the slices of bread on a flat surface and spread each slice with a tablespoon of the mayonnaise. Place a fillet on 4 of the slices of bread and top with 3 slices avocado, 1 slice tomato, and some watercress. Place the remaining slices of bread on top of the watercress, mayonnaise side down.
  • Whisk together the mayonnaise, zest, and juice in a small bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld. The lemon mayonnaise can be prepared 1 day in advance and stored covered in the refrigerator.
