GUILT FREE CREAMY ROASTED RED PEPPER & BASIL DIP (LOW FAT)
This is really tasty and you wouldn't really guess it is so low fat if you didn't already know. It is good with chips and vegetables and also really nice as a dip served with cold cooked shrimp, almost like shrimp cocktail. I also use it on my sandwiches instead of just plain mayo to give me lots of taste without fat. The cooking time includes the 1hr chilling time.

Steps:
- Put the sweet peppers and bail into a food processor or mini chopper and blitz for about 30 seconds until the sweet peppers are really finely chopped and combined with the basil.
- Combine the mayo, yogurt, onion flakes and garlic powder in a bowl making sure everything is well mixed.
- Stir in the sweet red pepper mixture and combine well.
- Cover and chill in the fridge for at least and hour but the longer the better so the flavors develop.
- Take out and serve or spread on a sandwich like normal mayo.

- Remove peppers from jar, puree on High until smooth (30-45 seconds). Set aside.
- Prepare fettuccine according to package directions; drain.
- In 10-inch skillet melt butter, add garlic. Cook over medium heat, stirring occasionally 1 minute.
- Add green onions and scallops. Continue cooking, until scallops are tender (5-7 minutes).
- Stir in sour cream and red pepper puree until well mixed. Cook another 6 minutes.
- In large bowl toss scallop mixture with cooked fettucine. Season with salt and pepper to taste.

BASIL PARMESAN DIP (COOKING LIGHT)
This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams.

- Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel and seed peppers.
- Puree all ingredients including peppers in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

- Wash the Zucchini, but leave it whole.
- Cook in a pan of simmering water until very soft - about 20 minutes.
- Drain and rinse the butter beans. Top and tail the Zucchini, squeeze most of the water out of it and chop roughly.

- Leave for flavours to blend for at least 30 minutes, then serve with dippers such as breadsticks or carrot sticks.

- Cook pasta according to package directions, drain and set aside.
- Drain and remove seeds from peppers.
- In a food processor (or blender), mix peppers, cream cheese, milk, basil and parmesan until smooth, about 1 minute.
- Place sauce back into same pot used for cooking pasta.
- Cook on medium heat for 5 minutes, stirring occassionally or until heated through.
