OKRA OR PICKLE ROLLUPS

Steps:
- 1. Spread a thin layer of the softened cream cheese on 1 side of ham or beef slice.
- 2. Cut each end off each okra if using.
- 3. Lay okra or pickle on 1 end of the cream cheese covered ham or beef slice.
- 4. Roll up and place seam side down on cookie sheet.
- 5. Refrigerate until firm enough to slice.
- 6. Slice into 1 1/2 inch pieces.
- 7. Lay flat on your favorite serving platter, cover with plastic wrap and chill until ready to serve.

- In a medium microwave safe bowl, mix cream cheese and Cheddar cheese. Microwave on high heat approximately 45 seconds, stirring frequently until melted and smooth.
- Lay ham slices flat, and spread with cheese mixture. Place one green onion parallel to one edge of each ham slice. Tightly roll the ham slices into thin logs around the green onions.
- Slice the logs into 1/4 to 1/3 inch wide rings. Arrange rings flat on a large serving platter. Cover and chill until serving.

Steps:
- In a saucepan over medium heat, add butter and diced onions.
- Cook onions until translucent, turn heat to low.
- Stir in V-8 juice and sugar, cover.
- In a deep frying pan over medium heat add butter and ham.
- Brown ham on both sides, then add tomatoes, okra and V-8 and onions.
- Stir, cover and simmer on low heat.
- Cook 2 cups of rice according to package directions.
- After rice is cooked, place on platter. Remove ham steak, cut in four pieces and lay on top on top of rice.
- Pour tomato and okra mixture on rice and ham.
- Garnish with fresh parsley.
