HAM CAKE-ETTES
Easter ham turns into a perfect combo of pancakes and croquettes for a nice way to use up some of the leftovers. Serve with a honey mustard sauce or any variety of chutneys. Applesauce is also a nice accompaniment.

MY GREAT GRANDMOTHER'S HAM CROQUETTES
I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

HAM AND CHEESE PATTIES
I love Recipe #137575 and I really love ham and cheese sandwiches, so I thought why not try to combine the two. This is what I came up with. Thank you Chef Dari Donovan for inspiring me. Submitted on June 13th, 2006.

GRILLED HAM BURGERS
My family loves my ham loaf, so I decided to make the ham loaf mixture into patties and grill them-it was an instant hit. Adding the arugula gives these burgers a peppery bite and honey mustard dressing adds just the right sweet and sour flavor. -Susan Bickta, Kutztown, Pennsylvania

Remove from heat when a thermometer reads 160°., Place a burger on bottom half of each roll; add two tomato slices. Drizzle with 1 tablespoon honey mustard dressing. Divide arugula evenly among rolls; top each burger with a few sprigs. Replace top half of roll. If desired, serve with additional dressing.
