Steps:

  • Preheat a grill.
  • Combine flour, oatmeal, sugar, and butter in a large bowl; mix until well combined. Place 3/4 of mixture along the bottom of a Dutch oven. Spread fruit over top, then sprinkle with the rest of the oatmeal mixture. Place on rack of hot grill; 1/3 of the charcoal must be on top and 2/3 of the charcoal must be on the bottom. The key to cooking it is not to open the Dutch oven until you have smelled the cobbler for 10 minutes. Every time you open the Dutch oven you lose the heat. Serve warm.

2 cups all-purpose flour
2 cups oatmeal
2 cups brown sugar
1 cup butter or margarine
4 cups your favorite fruit, cut into pieces if necessary

HASTY FRUIT COBBLER

One of my closest friends made this recipe for drop-in guests and it's quite a hit. When I'm IN A PINCH I will make it as my old reliable stand-by dessert recipe for a delicious cobbler dessert or take to a pot luck. Everyone loves it!

Steps:

  • 1. Preheat oven to 375 degrees
  • 2. Melt one whole stick of butter or margarine in the bottom of your baking pan. See pan size options: * 8x8 or 9x9 or a round pie plate. * Double the recipe for a 9x13" cake pan.
  • 3. Mix together: flour, sugar, baking powder, and milk until batter is mixed completely.
  • 4. Pour batter mixture into pan over the melted butter.
  • 5. Add juicy fruit of choice on top of the batter. Fruit Options: Fruit can be canned berries, cherries, peaches, or pineapple. Fresh stewed fruit may be used. My favorite is fresh peaches! I will buy fresh peaches and prepare them to freeze. When I need the fruit, I'll take a two cup food-saver sealed bag from the freezer..... thaw & use.
  • 6. Bake in 375 degree oven for approximately 30 minutes. This will serve 4-6. * Double the recipe for a 9x12 baking pan.

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

Easy Batter Fruit Cobbler image

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat ½ tbsp oil in a large pan, then fry the leeks, stirring for 5 mins until starting to soften. Add the stock, then simmer for 5 mins.
  • Meanwhile, tip the flour into a bowl, make a well in the centre, then add the yogurt, remaining oil, thyme leaves and a little salt. Using a cutlery knife, mix to bring together to a soft dough. Divide into 4 and shape into rounds on a floured surface.
  • Stir the peas, ham and grated apple into the leeks, then divide between 4 individual pie dishes or one large dish. Top each with a round of dough, scatter with more thyme, then bake for 20 mins until golden.
