HAWAIIAN SWEET BREAD HOLIDAY STUFFING
Steps:
- Preheat oven to 350 degrees F.
- Tear the bread by hand into large, bite size pieces and spread out in a single layer on a sheet pan. Place the bread in the oven until it is dry and toasted, about 15 minutes. Remove the bread and place into a large mixing bowl. Mix in the pineapple chunks, cranberries, chestnuts, sage and thyme. Set aside. Cut the sausage into 1/4 inch rounds. In a large sauté pan over medium high heat, add the oil and brown the sausage. Once the sausage is browned, drain any excess fat from the pan and add the onions and celery to the sausage, allowing them to sweat, about 10 minutes. Add the garlic and cook for another 3 minutes. Add the sausage mixture to the bread. Pour the milk and stock over the bread and sausage mixture, stirring to incorporate. Fill each half of a pineapple with the stuffing mixture and bake at 350 degrees F for 30 to 40 minutes or until the top of the stuffing has nicely browned. Serve immediately.
HAWAIIAN BREAD-OYSTER-MUSHROOM STUFFING
I have been making this recipe for years. Sometimes with and sometimes without the oysters. But ALWAYS with the King's Hawaiian Bread. Gives such a unique, somewhat sweet flavor. Prep time is an estimate.

Steps:
- Heat butter in a large skillet.
- Add mushrooms, onion and celery; cook 5 to 8 minutes over medium heat, stirring occasionally.
- Set aside.
- In large bowl, mix the oysters, bread cubes, parsley and mixture of the salt, pepper and poultry seasoning.
- Add vegetables, the reserved oyster liquor, and the beaten eggs; toss lightly to mix.
- Stuff in a 14 to 16 pound turkey.
- or place dressing in baking dish and bake at 350 degrees for 45 to 60 minutes.

HAWAIIAN SWEET ROLL STUFFING

- Preheat the oven to 350 degrees F. Spread the softened butter in a medium baking dish or gratin dish.
- Toss the cubed bread with 2 tablespoons olive oil and the Italian seasoning in a large bowl. Transfer to a baking sheet and bake until crispy, about 10 minutes.
- Heat a large pan over medium-high heat. Add the remaining 2 tablespoons olive oil and the sausage. Cook the sausage, stirring and breaking up the meat, until brown, 8 to 10 minutes. Turn the heat to medium and add the onion, carrots and celery and cook until the vegetables are tender, 6 to 8 minutes. Add the garlic and cook for 1 minute, then add the rosemary and sage and cook for 1 more minute. Season with salt and pepper.
- Combine the toasted bread, sausage, vegetable mixture and raisins in a large bowl. Combine the stock and egg in a medium bowl and whisk until well blended. Add the stock mixture to the bread mixture and fold together.
- Transfer the stuffing to the prepared baking dish and bake until the top is crispy and hot through the center, 35 to 45 minutes.
KING'S HAWAIIAN BREAD (COPYCAT)
We absolutely love this bread. My sister won't buy anything but. It's kinda expensive so when I came across this, I had to add it here so we (Mom, Chris, and I) could always have it and everyone else could enjoy it too. The first time I ever had it, it was with the Spinach Veggie dip...OMGOSH it was DEEEVINE! So...next time you don't wanna spend the money, whip it up yourself! It does take a while...but so worth it!

- Beat the eggs. Add the pineapple juice, sugar, ginger, vanilla, and butter.
- Place 3 cups of flour in a large bowl. Stir in the egg mixture until well-combined. Sprinkle in the yeast, one packet at a time, and mix.
- Add the remaining 3 cups of flour and mix in . Blending with a spoon will be hard, so you may have to use your hands. Make sure it is thoroughly combined. Cover the bowl with a cloth and set in a warm place to rise for 1 hour.
- Remove from the bowl and knead in 1/2 cup flour. Knead about 10 times. Divide into three equal parts.
- Place in greased and floured loaf pans or shape into rolls. Cover and place in a warm place to rise for 1 hour.
- Bake at 350 degrees for 25-30 minutes or golden brown.

Steps:
- Set oven to 350 degrees F.
- Butter a 13x9 baking dish.
- In a skillet, cook bacon until crisp; remove and drain on paper towel; reserve 2 tbsp of drippings.
- Add in the celery and onion in drippings and cook until tender (adding in the chopped garlic the last 2 minutes of cooking time).
- Add mushrooms, sage, seasoned salt and pepper; cook and stir for 5 minutes.
- Remove from heat, stir in stuffing, or prepared bread crumbs, celery leaves, parsley and bacon; mix well.
- Combine eggs and broth; add to stuffing mixture and mix well.
- Spread into prepared baking dish, (dish will be full).
- Dot with melted butter.
- Cover and bake for 30 minutes.
- Uncover and bake 10 minutes longer, or until lightly browned.
OYSTER STUFFING WITH SHIITAKE MUSHROOMS AND LEEKS

- Preheat oven to 325°F. Place bread on baking sheet. Bake until beginning to dry, about 12 minutes. Cool completely. (Can be prepared 1 day ahead. Cover bread and store at room temperature.)
- Butter 11x7x2-inch baking dish. Melt 4 tablespoons butter in large pot over medium-high heat. Add mushrooms and sauté until mushroom liquid evaporates and mushrooms are beginning to brown, about 8 minutes. Transfer to large bowl. In same pot, melt 4 tablespoons butter over medium-high heat. Add celery and cook until softened, about 4 minutes. Add leeks; cook until vegetables are tender, about 4 minutes longer. Add sautéed vegetables, parsley and dried herbs to mushrooms; toss. Season with salt and pepper.
- Add bread cubes and oysters to vegetables in bowl; stir to combine. Mix in reserved 1/2 cup oyster juices and Turkey Stock. Season with salt and pepper. Use 9 cups stuffing for turkey. Transfer remaining stuffing to prepared baking dish; cover with foil and chill until ready to bake. Bake stuffing, covered, at 325°F, until heated through, about 45 minutes.

I have a recipe for Hawaiian Stuffed Chicken Breasts that my family just goes crazy for. It is stuffed with hawaiian stuffing. It is so good I decided to make it separatly as a side dish. Yummm!
