- Preheat oven to 400°. Cut bacon strips crosswise in half. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Wrap a bacon piece around each Spam cube; secure with a toothpick. Place in a 15x10x1-in. ungreased baking pan. Bake for 10 minutes. In a bowl, combine mustard, syrup and garlic; drizzle over bacon-wrapped Spam. Bake until bacon is crisp, 5-10 minutes longer.

BACON WRAPPED SPAM BITES WITH SPICY HONEY MUSTARD
Need a quick and easy appetizer? Look no further than these Spam bites (trust us). They're juicy and the hickory-smoked flavor shines through. We love the spice rub. It balances out the flavor of the Spam and bacon. Sweet and tangy, the honey mustard is perfect for dipping.

- 1. Whisk together the Dijon mustard, honey, hot sauce, and Worcestershire sauce until well blended, and set aside until ready to serve. (It's best served at room temperature, so you won't need to refrigerate the spicy honey mustard.)
- 2. Place all of the spice rub ingredients in a gallon-size Ziploc bag, and shake well until thoroughly blended.
- 3. Cut the Spam into 16 cubes. Place Spam cubes in Ziploc bag and shake until cubes are coated with the seasoning rub.
- 4. Lie the 16 bacon slices on a flat surface. Place one seasoned Spam cube at the tip of each bacon slice, and roll to the other end so that the top and bottom of Spam is wrapped inside the bacon slice, leaving the sides open (i.e., so sides aren't wrapped in bacon). Secure the end with a toothpick or short skewer.
- 5. FOR GRILLING: Place Spam Bites on hot for grill 7 to 10 minutes or until bacon is crisp-cooked but still moist, turning frequently for even grilling. FOR OVEN-BAKING: Spam Bites can also be placed on a foiled lined baking sheet and roasted in the oven for 15 to 20 minutes at 375°F. It's best to have about an inch space between them, as they'll stick together and tear the bacon wrap if too close together on the baking sheet.

- 1. cook noodles in boiling salted water. Drain
- 2. Add olive oil to saucepan. Saute onions until translucent. Slice Spam into desired size pieces. Add to saute pan and brown on all sides.
- 3. Combine remaining ingredients except cilantro. Pour over spam mixture and heat until thickened.
HAWAIIAN SHOYU MUSUBI
Presenting an all-time favorite Hawaiian snack: shoyu musubi. Yep, it involves slices of Spam -- seared to crispy perfection, caramelized until it's salty-sweet and wrapped up in sushi rice and nori. Although it's often served like Japanese nigiri (with a big slice of Spam blanketing rice), this recipe makes cute little sushi roll-style bites instead.

- Cut the Spam into 6 slices and pat the slices dry with paper towels. Wash and dry the Spam can, then line the inside with a sheet of plastic wrap.
- Whisk together the soy sauce and brown sugar in a small bowl.
- Heat the oil in a large skillet over medium-high heat. Add the Spam slices and cook, flipping once, until evenly brown and crispy, about 3 minutes per side. Reduce the heat to medium. Add the soy sauce mixture to the skillet, making sure to scrape in all of the sugar, and quickly flip the Spam slices to coat them. Turn off the heat, leaving the Spam in the skillet to continue absorbing the sauce as it cools.
- Add 3 tablespoons of rice to the Spam can, dipping the tablespoon measure in cold water as needed to prevent the rice from sticking. Use the back of the tablespoon to pack the rice into a level, compact layer. Top the rice with a generous pinch of furikake and a slice of Spam. Add 3 more tablespoons of rice and pack the rice into an even layer. Grasp the plastic wrap to lift the rice-Spam stack out of the can.
- Place a sheet of nori on a clean work surface rough-side up. Transfer the rice-Spam stack to the center of the nori--so its length is perpendicular to the length of the nori. Tightly fold one end of the nori up over the rice-Spam stack. Dab water across the second end of the nori, tightly fold it up over the first end and press to seal the seam. Flip the musubi over so the seam side faces down. Repeat with the remaining rice, furikake, Spam slices and nori, replacing the plastic wrap with a new sheet every time.
- Dampen a sharp knife with cold water and carefully slice each roll crosswise into 4 pieces.

- 1. Cube the spam into very small cubes.
- 2. Slice the green onions into thin slices.
- 3. Add a tiny bit of oil to a pan and toss in the spam and saute a few minutes. Toss in the green onions and saute a few minutes.
- 4. Add in the soy sauce. I use low sodium soy sauce. To taste. You do not want it too juicy but you want it flavorful.
- 5. Add the Accent. This is optional. A lot of folks do not use MSG and I rarely use it.
- 6. Saute together until the green onions have wilted. Set aside. (you will have to resist taking bites of this).
- 7. Take a wonton wrapper and place a spoonful of the spam mixture in the middle. Fold over once and seal the edges with your finger dipped in water.
- 8. Place wontons in a pan covered with a damp paper towel to keep them moist.
- 9. Deep fry until golden brown. Serve with Tiger Sauce or any sweet thai chili sauce.
