MOMMA'S HEALTHY MEATLOAF
This is a super healthy and simplified version of a family favorite.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
- Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

HEALTHIER & LEAN BAKED MEAT LOAF
I created this meat loaf to be a bit healthier than some of the others I already have posted. Starting with the meat I used, Ground Round, then adding in Parmesan cheese and Ground Flax seed in place of the bread crumbs, then for added flavor & moisture I added onions and my own Homemade no sugar added Barbeque Sauce to cut back on some of the carbs. This meat loaf turned out so tasty and lean, but not dry, and I was very proud of the results. I am sure you will be too. It is a great way to eat a bit healthier weather you are watching what you eat or not. The main thing is it TASTE GREAT.

Steps:
- PREHEAT OVEN TO 350 DEGREES F. Add ground round to a large bowl & large eggs.
- Add lipton onion soup mix to a small bowl, or glass measuring cup, then pour in evaporated milk. Stir and set aside for about 15 minutes to rehydrate.
- Now add the grated Parmesan, & ground flax seed. Stir to mix together.
- Add in 3/4 cup sugar free BBQ Sauce & rehydrated onion soup mix, saving the remaining sauce to be used on top of the meat loaves later, then blend the meat mixture with the sauce & rehydrated onion mixture.
- Prepare a shallow jelly roll type baking pan by lining with aluminum foil for easier clean up. Then spray with non stick cooking spray.
- Divided meat mixture evenly in half to make approximately even size meat loaves. Shape as desired and place onto pan. Repeat with second loaf.
- Top each loaf with 1/2 cup of sugar free Barbeque Sauce, I used my own homemade no sugar added version. Then spread over the top and bake in preheated 350 degree F. oven for 1 hour, then during last 10 minutes add the mozzarella cheese shreds on top and return to oven for 10 minutes. - Remove from oven & allow to cool for about 10 minutes before serving.
- Slice serve and enjoy with your favorite sides. I served mine with my Tasty Revamped Recipe for Rice & Spinach using Shirataki Rice. at only 117 calories per serving. I will post the recipe soon.

ZUCCHINI MEAT LOAF

- Preheat oven to 350 degrees.
- In a large bowl, mix all the meatloaf ingredients until well blended, then press this mixture into an ungreased 9 1/2 inch deep dish glass pie plate.
- Bake for 35 minutes.
- Meanwhile, in a small bowl, mix all the topping ingredients well.
- After the 35 minutes remove meatloaf from the oven, and pour topping on the meatloaf, spreading evenly.
- Return the meatloaf to oven, and bake an additional 10-15 minutes or until thoroughly cooked in center, and a meat thermometer reads 160 degrees.
- Let stand 5 minutes before serving.

- In a large nonstick skillet, saute the onion, red pepper and garlic in oil until tender. Transfer to a large bowl. Stir in the bread crumbs, chili powder, salt, oregano, cumin, pepper, 2/3 cup diced tomatoes with green chilies, yogurt and egg. Crumble beef over mixture and mix well., Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Spoon the remaining diced tomatoes over top. Bake, uncovered, at 350° for 55-60 minutes or until no pink remains and a thermometer reads 160°. Drain if necessary; let stand for 15 minutes before slicing.

- Preheat the oven to 375° F and line a 9x5-inch loaf pan with parchment paper, leaving about an inch of overhang on both sides. This will help to easily remove the meatloaf from the pan.
- In a large mixing bowl, use clean hands to combine the ingredients for the meatloaf. Mix until well combined.
- Transfer the meat mixture to the prepared loaf pan, pressing to shape it to the inside of the pan making sure there are any air pockets left.
