DOWNEAST BLUEBERRY S'MORES

When you hear the word "Downeast", one of the things you think about are blueberries from Washington county. Washington county produces over 90% of the nation's blueberry crop and is the world's largest producer. They are grown on over 2,000 acres of barrens and about 15 million pounds of blueberries are harvested and canned or frozen each year. Mix these up into a s'more and you have a mouth-watering treat.

Downeast Blueberry S'mores image

Steps:

  • Put the chocolate on the graham cracker and lay on grill.
  • Place the marshmallow on top of this.
  • When melted--wont take long, take off grill and press the small bluerries into the marshmallow.
  • Put on the top graham cracker.

1 sheet graham cracker (broken in half)
2 hershey chocolate squares
1 marshmallows
1 tablespoon small maine blueberries (if big blueberries, use about 10 of them)

BLUEBERRY-LAVENDER SHRUB

Floral and fruity, with just the right amount of tang, this blueberry-lavender shrub is your new summer fave for cocktails or sipping with seltzer.

Steps:

  • Place blueberries and sugar into a medium bowl. Crush the berries, and then stir to combine.
  • Cover bowl with plastic wrap and place in refrigerator. Allow to macerate for up to two days.
  • Meanwhile, place lavender into a nonreactive container, cover with cider vinegar, and refrigerate for up to two days.
  • Position a fine-mesh strainer over a small bowl and pour blueberry mixture through to remove solids.
  • Strain vinegar mixture over the same mesh strainer, into same bowl as blueberry syrup. Allow to combine.
  • You may have some sugar clinging to the berry solids in the strainer. If so, set the strainer with the solids over another small bowl. Pour the syrup-and-vinegar mixture over the solids to wash the sugar into the bowl. Repeat as needed.
  • Pour syrup-and-vinegar mixture into a sanitized mason jar. Cap it, shake it well to incorporate any undissolved sugar, and place in the refrigerator for a week before using.
  • Discard the solids or save them for another use.

1 pint blueberries

8-10 lavender sprigs
1 cup apple cider vinegar

Steps:

  • Stir together blueberries, sugar, wine, stock, lemon juice and herbs in a medium saucepan. Bring to a boil; reduce heat to medium-high. Cook, stirring frequently, for about 40 minutes or until mixture is thickened and reduced to a jam-like consistency. Let cool, then remove herb stems. Place mozzarella balls onto skewers and toast over an open flame, turning skewers to evenly melt cheese. Top grilled baguette slices with a little of the sun-dried tomatoes, a spoonful of blueberry mixture, then a melted cheese ball.

1 (15-oz.) package frozen blueberries, thawed
1 cup sugar
1/2 cup Mirassou Sauvignon Blanc
1/2 cup chicken stock
1/2 cup fresh lemon juice
3 sprigs fresh rosemary
2 sprigs fresh thyme 16 bite-sized fresh mozzarella balls
16 garlic rubbed grilled baguette slices
16 oil packed sun-dried tomato halves, chopped
