Flattened Cornish Game Hens With Garlic-citrus Marinade image

Steps:

  • Prepare BBQ (Medium heat).
  • Combine olive oil, chopped thyme, garlic,lemon peel, lime peel, honey, salt, and pepper in a baking dish and stir marinade to blend well.
  • Place hens on work surface and cover with plastic wrap and pound gently with mallet to flatten slightly.
  • Place hen halves in marinade in dish, using fingers, rub both sides of hens with marinade.
  • Let marinate 20 minutes at room temperature.
  • Grill hen halves until just cooked through and skin is lightly charred, brushing with remaining marinade, about 12 minutes per side.
  • Arrange hen on plates and garnish lemon wedges, lime wedges, and fresh thyme sprigs.

Teriyaki Hens with Bok Choy image

Steps:

  • Preheat the oven to 425 degrees F. Season the hens with salt and pepper and place skin-side up in a roasting pan. Roast until the skin is slightly crisp, about 25 minutes.
  • Meanwhile, combine the soy sauce, hoisin sauce, vinegar, ginger, 1 chile pepper and 1/4 cup water in a pot. Cut half of the scallions into large pieces, and zest and juice half of the grapefruit; add to the pot. Simmer, stirring occasionally, until thick and syrupy, about 20 minutes. Brush the hens with a few tablespoons of the sauce and continue roasting until golden, about 8 more minutes.
  • Peel and segment the remaining grapefruit half and place in a bowl. Thinly slice the remaining scallions and mince the remaining chile pepper; add to the bowl along with the bok choy, sesame oil, and salt and pepper to taste. Place half a hen on each plate. Stir any pan drippings into the remaining sauce and drizzle over the top. Serve with the bok choy salad and garnish with sesame seeds.

Steps:

  • Combine onion, apple cider vinegar, and barbecue sauce. Set aside.
  • Coat hens with oil, dry rub, salt, and pepper. Refrigerate overnight.
  • Cut aluminum cans in half. Fill cans with onion, vinegar, and barbecue sauce mixture. Place the cans on a hot grill, and set the hens on top of the cans. Grill for approximately 1 hour.
  • Brush lightly with barbecue sauce after 1 hour of cooking.

  • Place hens in a large resealable plastic bag. In a small bowl, combine the remaining ingredients. Pour half into bag; add the hens. Seal bag and turn to coat. Refrigerate for at least 1 hour. Cover and refrigerate remaining marinade. , Drain and discard marinade from hens. Place hens in a 13x9-in. disposable aluminum pan. Pour reserved marinade over hens; cover pan. , Grill, covered, over medium-hot heat for 35-40 minutes or until a thermometer reads 180° and meat juices run clear, basting frequently. Steps:

  • Place 2 whole garlic cloves and 2 lemon wedges in each hen.
  • In a small bowl, combine oil,smashed garlic, rosemary, sage, tarragon, thyme, salt and pepper.
  • Gently separate skin from breast and thigh of each hen and rub meat with herb mixture.
  • Rub any extra over skin.
  • Arrange birds on baking sheets lined with parchment paper.
  • Roast birds in a preheated 400°F oven for 45 minutes or until well browned and cooked through.
  • Baste occasionally.
  • Place birds on a platter and transfer pan juices to measuring cup.
  • To make sauce, remove fat from pan juices.
  • Place juices in a saucepan with stock, soy sauce and Worcestershire sauce and bring to a boil.
  • Cook a few minutes.
  • In a small bowl, combine flour and margarine.
  • Stir into sauce and cook until just slightly thickened.

  • To prepare the barbecue sauce: combine the first 6 ingredients in a medium bowl.
  • Place 3/4 cup sauce in a large bowl; cover, and chill the remaining barbecue sauce.
  • Add the chicken legs and thighs to the sauce in the large bowl; toss to coat.

  • In a small saucepan, whisk together hoisin sauce, 1 tbsp sesame oil, 2 tbsp soy sauce, rice vinegar, sugar, vegetable broth, garlic, ginger and corn starch over medium heat. Allow to simmer until mixture thickens, about 5-7 minutes, then remove from heat and set aside.
