Homemade Einkorn Spelt Bread image

Steps:

  • Place water, spelt flour, einkorn flour, oat flour, flax seeds, sugar, butter, salt, and yeast in a bread machine in the order listed by the manufacturer. Run Wheat cycle.
  • Check dough's moisture level while the machine is mixing; add enough milk to reach a smooth, damp consistency. Remove dough from the machine after the cycle is done, about 1 hour 45 minutes.

2 cups spelt flour
2 cups einkorn flour
½ cup oat flour
¼ cup flax seeds
2 tablespoons white sugar

I have a gluten sensitivity. I have been looking into low gluten breads that are delicious and everyone loves. I found einkorn and spelt flours & when combined make a perfect loaf of bread. On their own, they have a different texture, but this bread recipe is AMAZING! Also, if you love a creamy soup and thick gravy my HOT TIP, use einkorn flour or white spelt as a thickener

Steps:

  • Mix yeast, water, honey. let sit five minutes add rest of ingredients mix until nice dough forms. Pour into greased 10X5 loaf pan (that's what size I had but you could do two smaller loaves) Just fill 2/3 full whatever pans. Cover loosely with damp towel and let rise 1 hour 20 minutes. Then, bake 375 for 30-35 minutes-maybe less if smaller pans.
  • Many blessings & enjoy a low gluten super high protein bread. This is a pretty forgiving bread--use sugar or agave nectar instead of honey. Use a combo of flax and sesame seeds etc! I use regular yeast, not rapid rise. ENJOY my gluten sensitive people!

Stir briskly with a wooden spoon. Add more flour until dough comes together. It is a sticky dough, but you will want to be able to handle it. Turn it out on a floured surface and knead for 5 minutes, adding additional flour if necessary, until smooth and elastic.
  • Put the dough in a well oiled bowl, turning once to coat both sides. Cover and allow the dough to raise in a warm area for 2 hours.

  • Combine all of the dry ingredients in the bowl of a stand mixer. (You can do this by hand if you prefer.) Then add the yeast mixture along with the buttermilk and beer. Attach the dough hook and knead on the bread setting (#2) for 10 minutes. Scoop the batter into a large non-reactive bowl, cover loosely with plastic wrap, and let it sit at room temperature for at least 8 hours, preferably longer, up to 24 hours (the longer the better for the whole grain berries to soften and for heightened sourdough properties. Also the longer it ferments the more liquid will be absorbed so less chances of a moist center after baking.)
  • Scoop the batter (it will be thick and gooey but not like regular bread dough) into a generously buttered 13x4x4 Pullman loaf pan and smooth the top to even it out. Sprinkle with oats. (Note: Baking this bread in a Pullman loaf pan yields those nice small, square slices of bread. But it also helps ensure that the center of the bread is fully cooked.) I always bake this without the lid on.

  • Add the water and honey to a large bowl, or the bowl of your stand mixer. Sprinkle the yeast overtop and let it sit for ten minutes. After ten minutes, it should be foamy. If the mixture doesn't foam, discard - you need new yeast.
  • Add the milk, olive oil, 2 cups (300g) of the flour, and the salt. Stir with a wooden spoon until a loose dough forms.
  • Add the remaining flour 1/2 cup at a time, kneading between each addition, until a smooth, springy dough forms. This should take 8-10 minutes. It should be quite smooth and not really sticky. If you're using a stand mixer, use the dough attachment for this.
  • Place the dough into a large greased bowl and cover with a tea towel or large plate. Let it rise in a warm, draft-free place for one hour, or until doubled in size. This is called proofing.
