HOMEMADE VEGETARIAN SMOKY BREAKFAST SAUSAGE LINKS

I haven't tried this, but it looks so good! Adapted from Vegetarian Times magazine! These sausages were a hit among Vegetarian Times vegan staffers, who loved the idea of homemade veggie links. They are a snap to make in a 2-layer bamboo steamer, but you may use a metal steamer in a large saucepan, you may just have to do several batches.

Homemade Vegetarian Smoky Breakfast Sausage Links image

Steps:

  • Prepare bamboo steamer(or use steamer in a large saucepan), and lay out 25 sheets of foil, each about 5 inches square.
  • Mash beans with fork in a bowl until smooth. Stir in remaining ingredients.
  • Roll walnut sized pieces of bean mixture into small links(they don't have to be perfect). Wrap each link in foil, and twist both ends so it looks like a tootsie roll.
  • Place wrapped links in steamer, cover, and steam 30 minutes. Serve immediately, or refrigerate until ready to use.
  • Warm gently in the oven or toaster oven 8-10 minutes if not serving immediately.

1/2 cup cooked adzuki beans, rinsed and drained (canned is okay)
1 1/4 cups vital wheat gluten
1 cup vegetable broth
1/4 cup nutritional yeast
1 tablespoon soy sauce (low sodium)
2 tablespoons maple syrup
1 tablespoon light olive oil (or veg. oil, canola, etc.)
1 tablespoon rubbed sage (not powdered)
2 teaspoons ground fennel
1 teaspoon liquid smoke
1/2 teaspoon ground nutmeg

Steps:

  • In a 3 1/2 to 4 quart slow cooker, stir together the barbecue sauce and cranberry sauce until combined. Stir in the wieners.
  • Cover and cook on low-heat setting for 4 to 6 hours or on high-heat setting for 2 to 2 1/2 hours. Serve immediately or keep warm on low-heat setting for up to 2 hours. Serve with toothpicks.

1 cup barbecue sauce
16 ounces cranberry sauce, jellied
2 (1 lb) packages cocktail franks

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic and cook for about 4 minutes, until fragrant and the onion is translucent.
  • Add the apples, mushrooms, fennel seeds, rosemary, sage, maple syrup, salt, and pepper and stir to combine. Reduce the heat to medium-low and cook for about 10 minutes, until the mixture is tender and the liquid released from the mushrooms has evaporated. Remove from the heat and let cool.
  • Add the cannellini beans and chickpeas to a food processor and pulse into a smooth paste.
  • Transfer the bean paste to a large bowl and add the apple/mushroom mixture and vital wheat gluten. Mix with a spatula and then your hands until well combined.
  • Form the sausage mixture into a loaf, wrap in plastic wrap, and refrigerate for 2 hours.
  • Unwrap the chilled sausage mixture and divide into 10-12 equal pieces, depending on what size sausages you would like.
  • Roll a piece between your palms into a sausage shape. Place in the center of a large sheet of plastic wrap and roll the plastic over it so the sausage is completely encased. Twist the ends of the wrap and knot them together tightly. Repeat for each sausage.
  • Bring a large pot of water to a simmer. Plunge the wrapped sausages in the water and simmer for 45-50 minutes, until the sausages are firm.
  • Remove from the water and let cool for about 5 minutes, then unwrap.
  • Heat the remaining tablespoon of olive oil in a large skillet over medium-low heat. Fry the sausages for 1-2 minutes on each side, until golden brown.
  • Serve immediately or keep wrapped in the refrigerator for up to 4 days.
  • Enjoy!

  • Decide whether you'll be cooking the sausages in the Instant Pot, oven, or steamer.   • In the bowl of a large food processor, combine the first 15 ingredients and the maple sugar, if using (this is everything except the broth, chickpeas, and gluten). Process into a slurry.
  • Scrape down the sides of the bowl as needed. Add the broth and chickpeas, and pulse 5 to 7 times to break up the beans. Add the vital wheat gluten, and process for 30 seconds. Transfer the dough to a flat work surface, and knead by hand for 30 seconds to 1 minute or until the dough feels firm.
  • Shape the dough into a square, and cut it into 4 equal-size pieces. To create 16 small/medium-size links, cut each of those pieces into 4. Or for 8 large, entree-size sausages, only cut each piece of dough in half.
