HOMEMADE MULTI-GRAIN BREAD

Most multigrain recipes give you a dry bread that after the first day is not much good. This one is different and is from Cooks. It's the best I've come up with so far, and I've made a lot of bread.

Homemade Multi-Grain Bread image

Steps:

  • 1. Pour boiling water over cereal and mix, then cool to 100 degrees ( so as not to kill the yeast later)
  • 2. Add the honey, melted butter, yeast and flours. Mix just until combined in a mixer. Cover and leave for 20 minutes
  • 3. Add salt and knead on medium for 3-4 minutes. Check for consistency and knead 5 more minutes.
  • 4. Add the pumpkin seeds and mix until blended. Place dough in a greased bowl, cover and place in a warm place until dough is doubled.
  • 5. Divide dough in half and shape into two loaves. Spray with some oil and roll in the oatmeal. Place in greased loaf pans and let rise until doubled
  • 6. Bake in a 375 oven for 35-40 minutes or until internal temperature of 200. Cool for few minutes on a rack and then turn out on the rack to cool.

1 1/4 c hot multi-grain cereal mix
2 1/2 c boiling water
1/4 c honey
1/4 c melted butter
2 1/2 tsp yeast
7 1/2 oz whole wheat flour ( just shy of 1 cup)
15 oz all purpose flour (just shy of 2 cups)
1 Tbsp salt
3/4 c pumpkin seeds
3/4 c oatmeal ( more or less)

HONEY CRUNCH MULTI-GRAIN BREAD

Mixed on the dough cycle in my bread maker, then baked in my oven! Prep time includes mixing on the dough cycle, and the approximate time for a second rise before baking.

Honey Crunch Multi-Grain Bread image

Steps:

  • Place dough ingredients, in order listed, into the bread machine pan, ending with the yeast in one corner, and the salt in another corner.
  • Select dough cycle on bread maker ~ remove dough from machine after the first rise.
  • Spray a plastic mat with cooking spray, then plop the dough onto the mat, folding the dough and punching it down ~ then shape the dough into a loaf.
  • Spray a Pyrex loaf pan with cooking spray; add the loaf and slash the dough a few times if desired.
  • FOR TOPPING: Sprinkle 1/2 tablespoon honey crunch wheat germ on top of shaped and slashed loaf, if desired.
  • LET DOUGH RISE UNTIL DOUBLED. (Depending upon the temperature of your kitchen, this could take 1 1/2 hours, or more!).
  • Preheat oven to 400°F.
  • Place Pyrex loaf pan into oven, THEN IMMEDIATELY REDUCE OVEN TO 375F ~.
  • Bake 20 minutes ~ Tent loosely with aluminum foil, and continue baking for another 15 minutes.
  • Remove from oven, and turn bread onto a wire rack to cool.
  • Brush top, sides, and bottom of warm loaf with melted butter, if desired for a soft crust.

1 large egg (slightly beaten)

2 1/2 teaspoons bread machine yeast
1 1/2 teaspoons salt
1/2 tablespoon honey crunch wheat germ (OPTIONAL topping for shaped dough)
2 tablespoons melted butter (OPTIONAL ~ brush on warm baked loaf for soft crust)

MULTI-GRAIN HONEY WHEAT BREAD

A "partial" bread machine recipe. Start in the machine, and finish in your oven. Can also use a traditional mixer with a dough hook, if you wish.

Multi-Grain Honey Wheat Bread image

Steps:

  • Place ingredients into bread machine in appropriate order.
  • Set machine to"manual" to knead dough.
  • After manual bread machine cycle, remove machine hook from dough, and turn dough into a greased loaf pan and punch down.
  • Let rise until doubled in size (about an hour).
  • Keeping dough in same pan in which it rose, brush with beaten egg and sprinkle with extra flax seed, oats, and/or wheat germ (optional), and allow dough to re-rise about ten minutes.
  • Bake at 375 degrees F for 20-25 minutes until nicely browned.
  • Remove pan from oven, and turn bread out of pan to cool on a wire rack.
  • Serve with an herb butter, if you desire (I have 3 different herb butter recipes available:#27286,#27297, and#27739).

  • Add the multigrain flour to the bowl of a stand mixer or a large heat-proof mixing bowl. Pour in the boiling water, and carefully stir the flour and water with a rubber spatula until it forms a thick paste. Stir in the butter until well combined. Let the mixture cool for about 20 minutes.
  • Once the multigrain mixture is warm to the touch and not hot, stir in the honey until thoroughly combined. Stir in the yeast (and vital wheat gluten if using, in that order). It’s important to make sure the mixture truly is lukewarm before adding the yeast. Let stand for 10 minutes to activate the yeast.
  • Add the all purpose flour, ¼ cup at a time, and knead until the dough ball is smooth. This will take about 10-15 minutes. The dough should be slightly sticky, but should not stick to a rubber spatula. Soft dough makes soft bread, so do not use more flour than necessary!
  • Use the rubber spatula to clean the sides of the bowl, and form the dough into a smooth ball. Cover the bowl with a plate, and let it rise in a warm place for 45 minutes to 1 hour, or until the dough doubles in size.
