CORN PONE
My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. Steps:
- Preheat oven to 375°. Add oil to a 12-in cast iron or oven-proof skillet; place in oven. In a large bowl, whisk together all cornmeal, salt and water. Mixture will be thick. Carefully spread mixture evenly in skillet, spooning some of the oil on top of batter. Bake until edges start to brown, about 35 minutes. To serve, break into pieces and serve with butter and honey if desired.

INDIAN CORN CAKE
A great decorated center piece cake for your fall dinner party. The idea came from a 1998 Crafting Traditions magazine. It is made from 1 9" round yellow cake. The recipe calls for a bought cake mix and frosting, but I don't see why you couldn't make it from scratch. The 1/2 cup of water and egg is what my boxed cake required. Steps:
- Bake cake in a 9 inch pan per box instructions.
- Let cake cool for 10 minutes and then de-pan the cake onto a cooling rack.
- Cool cake completely.
- After cake has cooled, place in deep freezer for about 30 minutes. This will help in cutting.
- Cut cake into 3 elipses. See photo in photo section.
- Place pieces on cardboard and frost.
- Arrange Reese's Pieces on cake to simulate kernels.
- The stocks are made from a light weight paper brown bag. Cut paper into strips to resemble corn stocks and add to cake.
- Tie twin or yarn around corn stocks.

CORN CAKES
This is a light, easy to prepare recipe with Mexican flavors. Corn cakes make a nice snack, a vegetarian main course served with salad or other vegetables or perhaps a side dish to accompany fish, chicken or meat.

- For the avocado salsa: Mix the red onion, avocado, lime zest and juice and tomato in a small bowl. Season with salt and pepper; set aside.
- For the corn cakes: Whisk together the Cotija, flour, cumin, paprika and egg in a medium bowl until incorporated. Add the corn, garlic, scallions and lime zest. Fold together until incorporated. Set aside.
- Heat 1/2 inch of oil in a large, heavy-bottomed skillet over medium heat to around 350 degrees F.
- In batches, add 2-tablespoon scoops of the batter and fry until golden and crisp, 2 to 2 1/2 minutes per side. Remove to a paper towel-lined plate, sprinkle with sea salt and drizzle over some of the lime juice.
- Serve the corn cakes hot, topped with the avocado salsa.
INDIANA CORN CASSEROLE
Delicious recipe for a corn side dish, very indulgent and rich. Great potluck dish for dinners. Note: for a lower-fat version of this, use half the bacon, butter, and flour.

Steps:
- Preheat oven to 350 degrees.
- Dice bacon and cook. Drain and set aside. Reserve half of bacon drippings to saute the vegetables with.
- Melt butter over medium heat in a large pot.
- Saute onions, celery, and bell peppers until tender.
- Stir in flour, then sour cream, until well combined.
- Add in thawed corn and most of the bacon bits and season with salt and pepper at this time.
- Pour mixture into 9X13" glass baking casserole dish. Sprinkle on the remaining bacon bits over the top.
- Bake for 30-45 minutes, until top is lightly browned.
- Garnish with chopped parsley for that extra "pop" of color.

- Prepare cornbread according to the package directions. Cool and crumble enough to measure 2 cups; set aside., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Crumble bacon and set aside. , To the drippings, add the celery, green pepper and onion. Saute for 2-3 minutes or until tender. Remove from the heat; set aside., In a saucepan, melt 1/2 cup butter. Stir in the milk, corn, jalapeno, pimientos, sugar, salt, vegetable mixture and bacon. Add 1 cup cornbread crumbs. Cook for 8-10 minutes or until heated through., Transfer to a greased 8-in. square baking dish. Melt the remaining butter; toss with the remaining crumbs. Sprinkle on top of batter. Bake at 350° for 18-20 minutes or until bubbles around the edges and is golden brown.

FRESH CORN CAKES
Corn's always been the basis of my favorite recipes-in fact, these corn cakes were one of the first things I made for my husband. For dinner, they're nice with fresh fruit salad and ham. They're also great with breakfast sausage and orange juice. Tom works for the highway department on Mount Hood, and we live at its base. Our children are 19, 16 and 13.

- In a medium bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, beat egg yolks; blend in milk and butter. Add to dry ingredients; stir until just mixed. (Batter may be slightly lumpy). , Stir in the corn, green onions, red pepper and green chilies; set aside. , In a small bowl, beat egg whites until stiff peaks form. Gently fold into batter. , For each pancake, pour about 1/4 cup batter onto a lightly greased hot griddle; turn when bubbles form on tops of cakes. Cook second side until golden brown. Serve immediately with syrup if desired.
