EASY INSTANT POT® COCKTAIL MEATBALLS
A twist on the grape jelly cocktail meatballs that everybody loves. This recipe uses apricot preserves, but feel free to use grape, orange marmalade, or even cranberry sauce - they're all delicious! Try different flavors of barbecue sauce too! These make the perfect party appetizer, especially when you're low on time!

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add apricot preserves, barbecue sauce, water, and crushed red pepper and whisk together. Add meatballs and stir to coat.
- Close and lock the lid; turn venting knob to sealing. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Arrange meatballs on a platter with toothpicks and additional crushed red pepper, if desired.

- In the inner pot of a 6-quart or larger instant pot, whisk together the chili sauce, apricot preserves, barbecue sauce, water, red pepper flakes, granulated onion and garlic until smooth. Stir in the frozen meatballs and then lock the lid in place, making sure the valve is set to seal. Pressure cook on high for 6 minutes, and then release the pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and carefully remove the lid.
- Give the meatballs a stir and transfer to a large serving bowl. Garnish with chives or scallions before serving.

- Place meatballs in the bottom of the Instant Pot. Top with the peppers, onions and undrained pineapple chunks.
- In a small bowl, mix together sweet and sour sauce, brown sugar, soy sauce, and garlic powder. Pour on top of meatballs and vegetables.
- Place the lid on the Instant Pot and turn the knob to SEALING.
- Push the PRESSURE COOK or MANUAL button and set the timer for 7 minutes.
- When the timer is finished, turn the knob to VENTING to do a QUICK RELEASE of the pressure. Remove the lid and stir.
- Serve over rice as a main dish or serve with toothpicks for a yummy appetizer.

- In a large bowl, combine the ground beef, dry bread crumbs and milk. Blend in ground pepper, parsley, onion, salt, egg and Worcestershire sauce. Mix thoroughly.
- Shape the beef mixture into 1 inch meatballs. In a large skillet, melt the shortening over medium heat and brown the meatballs.
- Meanwhile, in a medium saucepan, mix the chile sauce and grape jelly over medium heat, stirring occasionally, until jelly is melted.
- Pour the sauce over the browning meatballs and simmer for 30 minutes, or until meatballs are thoroughly cooked.

I am so sick of the standard sweet & sour meatballs with the cranberry sauce. So I started to play around in the kitchen & I think I came up with a winner. You surely could cheat & buy a store bought barbecue & add the rest of the ingredients, but it really is so easy that I wouldn't bother.

- Bring to a slight boil. Stirring occasionally.
- Simmer until sauce starts to thicken.
- Strain sauce.
- Preheat 375.
- Mix all meat ingredients except milk together.

- In a mixing bowl, combine all the ingredients for meatballs. Use your hand for best distribution of seasonings. With a small cookie dough scoop, scoop out the meat and place them onto a tray. Roll each into a ball.
- Turn on your instant pot and press SAUTE. Pour in oil. When hot, add meatballs add brown them for about 4-5 minutes (they don’t have to be completely brown on all sides). Pro tip: Lift the inner pot and shake it to save time turning each meatball over.
- Meanwhile, in other bowl mix the sauce ingredients and add the mixture to the pot with browned meatballs. If there are a lot of pieces stuck to the bottom of the pot, deglaze it (using the sauce scrape off the pieces). Cancel the SAUTE program.
- Cover with lid and lock it into its position. Turn the steam release valve to SEALING and set timer to 4 minutes. When the cooking cycle is finished, manually release the pressure by turning the valve to VENTING (be careful, the steam is hot).

- Add the 32 ounces frozen meatballs and diced jalapenos. Place the top on the instant pot. Making sure the steam release valve is set to sealing and not venting. Cook using the manual setting. Press the Manual button on the Instant Pot. Set the cook time for five minutes. Carefully use quick release once the time is up. Remove the meatballs and jalapenos into a large bowl and set aside. Drain the liquid, it is no longer needed.
- Return the insert to the pressure cooker and set to saute on the low setting. Add in the 16 ounces seedless blackberry jam and 16 ounces original barbecue sauce. Stir continuously until the jam has melted and the sauce is smooth.
