- In a large bowl, combine the first five ingredients. Add boiling water. Cover and steep for 5-6 minutes. Strain, discarding tea bags and spices. Stir honey into tea. Serve immediately.

- In a Dutch oven, bring water to a boil; remove from heat. Add tea bags; steep, covered, 6-8 minutes according to taste., Discard tea bags. Stir in sugar and pie spice until sugar is dissolved. Stir in remaining ingredients. Serve warm or refrigerate and serve cold over ice.

SPIKED GREEN TEA
Steps:
- Bring 4 cups water to a boil a medium saucepan; boil for 1 minute. Add 10 of the mint sprigs, the tea bags and the ginger; stir. Turn off the heat and let steep for 20 to 25 minutes. Discard the mint, tea bags and ginger. Stir in the honey until dissolved.
- Add 4 cups crushed ice to a pitcher. Pour in the green tea and the lime juice; stir to melt the ice. Add the sake and stir to combine.
- Pour the green tea mixture into 4 glasses filled with ice. Garnish with the lime slices and the remaining mint sprigs.

Steps:
- Place tea bags in a prewarmed large teapot and set aside.
- Place the spices in a 4-cup heatproof measuring cup and add the boiling water; stir to mix, then let the spices infuse for 2 minutes.
- Quickly pour the infusion into the teapot, straining carefully to prevent the spices from going into the teapot.
- Steep the tea in the spice infusion for an additional 2 minutes.
- Strain the brewed tea into teacups and serve immediately.

HOT SPICED TEA FOR THE HOLIDAYS
This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.
