SOFT ITALIAN BREADSTICKS

I use the "dough only" cycle on my bread machine to prepare these melt-in-your-mouth breadsticks that my family of five gobbles up! The soft, chewy breadsticks are irresistible when brushed with butter and sprinkled with Parmesan cheese. Steps:

  • In bread machine pan, place the water, butter, salt, flour, sugar, Italian seasoning, garlic powder and yeast in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed). , When cycle is completed, turn dough onto a lightly floured surface; divide in half. Cut each portion into 12 pieces; roll each into a 4-in. to 6-in. rope. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 20 minutes. , Bake at 350° for 15-18 minutes or until golden brown. Immediately brush with butter; sprinkle with Parmesan cheese. Serve warm.

  • Combine 1-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat milk, 1/4 cup water and butter to 120°-130°. Add to dry ingredients; beat on medium speed just until moistened. Stir in enough remaining flour to form a stiff dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch down dough. Pinch off golf ball-sized pieces. On a lightly floured surface, shape each into a 6-in. rope. Place on greased baking sheets 1 in. apart. Cover and let rise for 15 minutes., Preheat oven to 400°. Beat egg white and remaining water; brush over breadsticks. Sprinkle with coarse salt. Bake until golden, about 10 minutes. Remove from pans to wire racks to cool.

Italian Cheese Bread Sticks image

Steps:

  • 1. In a large bowl, combine 2 cups flour, yeast sugar and salt. Add water and oil to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough.
  • 2. Turn onto a floured surface; knead for 1-2 minutes or until smooth and elastic. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place for 20 minutes.
  • 3. While dough is rising combine the remaining ingredient EXCEPT for mozzarella cheese.
  • 4. Punch dough down; place on a greased 12-inch pizza pan and pat into a 12-inch circle. Brush with salad dressing and sprinkle seasoning mixture mozzarella cheese.
  • 5. Bake at 450 degrees for 15 minutes or until golden brown. Cut into sticks and serve warm.

Steps:

  • In a large bowl or stand mixer, mix together water, yeast, sugar.
  • Add in flour and salt.
  • Mix with a dough hook until it comes away from the sides of the bowl - add more flour if necessary.
  • Knead by hand or with dough hook for about five minutes.
  • Cover the dough ball with oil, place in a bowl, cover with plastic, and let rise at room temperature 30-45 minutes.
  • Preheat oven to 400 degrees
  • Grease 9×13 glass baking dish with butter
  • Press the dough into the pan
  • Spread the softened butter over the top of the dough
  • Spoon the minced garlic evenly over the top of the butter to make the garlic butter topping.
  • Sprinkle cheese over the top
  • Sprinkle Italian seasoning over the top
  • Cover with tin foil and bake for 15 minutes.
  • Remove tin foil and bake for another 10 minutes.
