ITALIAN SAUSAGE HAMBURGER HELPER SOUP
I created this soup back in 2010, using a box of Betty Crocker Hamburger Helper Italian Sausage Flavor. This soup is hearty and delicious!

Steps:
- 1. Spray the inside of a stock-pot, with a no-stick cooking spray.
- 2. To the pot, add the sausage, and season it with a bit of black pepper, if desired. (Do not add salt to this recipe!)
- 3. Brown the sausage over medium heat; stirring to break up the meat.
- 4. While the sausage is browning, cook the frozen green beans in a microwave, till they are about three quarters of the way done; drain beans and set them aside. (I cooked the beans in an 850 watt microwave for 6 minutes, but stirring them after 3 minutes I also season the beans with a bit of black pepper).
- 5. When sausage is done browning, then drain it in a colander.
- 6. To the stockpot, lightly sauté the onions for a minute or two. (Add a bit of vegetable oil if need be.)
- 7. Add garlic to the pot, and sauté the garlic for about 1 minute.
- 8. Place sausage back into the pot, then sprinkle the seasoning packet from the hamburger helper over all, and stir to coat the meat.
- 9. To the pot add the following ingredients: the beef broth, one and a half soup cans of water, the stewed tomatoes, sliced baby carrots, zucchini, green beans, the Italian seasoning, and the rotini pasta that's included in the boxed hamburger helper.
- 10. Bring soup to a boil, then lower the heat, and simmer the soup for about 14 minutes.
- 11. Remove soup from heat, stir the soup, and serve.
- 12. If desired, sprinkle each bowl of soup with a bit of the parmesan cheese.
- 13. Note: I noticed after cooking the soup, the carrots seemed to be slightly crisp. For those who'd prefer them to be a bit more cooked, I would do the following after adding the cooked meat, the seasoning packet, onion, garlic, broth, water, and just the carrots to the stockpot. Bring those ingredients to a boil, then lower the heat, and simmer it for 5 minutes. Then add the remaining ingredients, (the stewed tomatoes, zucchini, green beans and Italian seasoning) and bring the soup to a boil, then reduce the heat, and simmer the soup for about 14 minutes.
ITALIAN SAUSAGE PASTA SKILLET

- In 12-inch nonstick skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
- Stir in milk, hot water, and uncooked pasta and sauce mix (from Hamburger Helper™ box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until pasta is tender. Stir in vinegar.
- Remove from heat. Top with mozzarella cheese and red peppers. Cover; let stand 3 to 4 minutes to melt cheese. Top with croutons and basil.

BEST ITALIAN SAUSAGE SOUP
This is one of my favorite soups and it always gets rave reviews! Salad, hard rolls and wine make a meal! You can make this 24 hours ahead of time without the noodles and wait to add the spinach noodles until soup is reheated for serving. Yummy! Serve topped with grated Parmesan!

Steps:
- In a large pot, cook sausage over medium heat until brown. Remove with a slotted spoon, and drain on paper towels. Drain fat from pan, reserving 3 tablespoons.
- Cook garlic and onion in reserved fat for 2 to 3 minutes. Stir in tomatoes, wine, broth, basil, and oregano. Transfer to a slow cooker, and stir in sausage, zucchini, bell pepper, and parsley.
- Cover, and cook on Low for 4 to 6 hours.
- Bring a pot of lightly salted water to a boil. Cook pasta in boiling water until al dente, about 7 minutes. Drain water, and add pasta to the slow cooker. Simmer for a few minutes, and season with salt and pepper before serving.

Ok - go ahead and laugh! This comforting soup is well received in times of sadness or trouble. I keep the ingredients in the pantry for just those times, I kid you not!!!

Steps:
- Brown ground beef and onion in Dutch oven until beef is no longer pink- drain.
- Stir in cheese sauce mix from Hamburger Helper package.
- Stir in water, basil, salt, pepper& tomatoes, and heat to boiling, stirring constantly.
- Reduce heat, cover& simmer 10 minutes.
- Stir in macaroni from the Hamburger Helper package, add Veg-All, cover& simmer until pasta is tender, about 15 minutes.
- Stir in parsely& serve.

PASTA E FAGIOLI (ITALIAN SOUP) WITH ITALIAN SAUSAGE
A delicious version of this popular Italian soup. Adding the sausage (regular or turkey) makes it a satisfying meal if served with a nice warm baguette.

Steps:
- Heat olive oil in a large heavy pot over medium high heat.
- Cook onion in oil 2 minutes.
- Stir in garlic, celery and carrots and cook for 3 minutes.
- Add and brown crumbled sausage.
- Add basil, oregano and red pepper.
- Toss to coat.
- Stir in tomatoes and stock.
- Bring to a boil.
- Reduce heat and simmer 30 minutes.
- If necessary, add an additional cup of stock or water and stir in beans and tiny pasta.
- Simmer for 6- 8 minutes or until pasta is tender.
- Stir in parsley and serve hot with grated Parmesan cheese.
HAMBURGER HELPER MY WAY
I like some of the Hamburger Helpers. I have noticed though, that if made according to the directions on the box, the sauce thickens before the pasta can completely cook and it comes out a little "pasty". The overall flavor tends to have little starchy taste to it, so I make it my own way. With the ones that call for milk, they come out so nice and creamy if made this way. I use half the meat that the ingredients list calls for, because I find that 1 pound tends to be a little too much meat for my taste. You can use a whole pound if you want. You can also use any ground meat in this recipe. I have found that this "flavor" tastes really good with Italian Sausage. It is my favorite. This is really good with green beans or corn. You can use milk instead of the half and half if you are watching your fat and calories. I had to use a prep time in order for 'Zaar editing to accept the recipe, so it, as well as cook time, are approximate. This can be done with any of them. Just make adjustments where needed. The amount of milk and/or water used may be different with the other Hamburger Helper "flavors"

Steps:
- Brown the meat in a medium sized skillet.
- Do not add water to it unless there isn't enough fat in the meat.
- If water is needed, add very little.
- Bring the 3 cups of water to a boil in a small saucepan.
- Add the packet of macaroni.
- Boil until the macaroni is done and tender.
- When the meat is done, drain the grease from the skillet and return skillet to the burner.
- Don't remove the meat from the skillet.
- Drain the water from the macaroni and rinse with hot water.
- Add the macaroni to the meat and stir.
- Lower the burner to medium.
- In a shaker bottle or large cup, mix the half and half and the 1/2 cup water.
- Add the packet of sauce mix/powder and shake vigorously or stir in cup very well, until sauce mix/powder is completely dissolved and there are no lumps in it.
- With one hand, slowly add the sauce mixture to the hamburger mixture, while stirring constantly with the other hand.
- Stir constantly so that it doesn't start to stick to the bottom of the skillet.
- Sauce will start to thicken.
- Continue stirring constantly.
- You might need to lower the heat again.
- Once sauce has somewhat thickened, remove from heat and let stand.
- The sauce will completely thicken on its own.
