ROCKIN' GUACAMOLE (SOUTHWEST)

This recipe comes from the 1997 cookbook, Vegetarian Planet & it makes a dip that even I can enjoy, & I don't normally care for this green stuff! Preparation time does not include the time needed for the dip to chill.

Rockin' Guacamole (Southwest) image

Steps:

  • Preheat oven to 425 degrees F.
  • Cut eggplant in half & lay the two halves on a baking sheet, cut side up.
  • Bake for 30 minutes, then remove from oven & let cool.
  • In a bowl, combine avocado, the bell peppers, cayenne, garlic, red onion, cilantro, olive oil & lime juice.
  • Spoon the eggplant from its skin & add it to the bowl, then with a potato masher or a fork, mash the mixture coarsely.
  • Add salt & pepper to taste, then chill the dip for at least 30 minutes, before serving with chips.

1 (16 ounce) eggplants
1 Hass avocado, ripe, peeled, pitted
1 red bell pepper, seeded, minced
1 green bell pepper, seeded, minced
1 pinch cayenne
1 garlic clove, minced
1/2 cup red onion, minced
1/4 cup cilantro, minced
1 tablespoon extra virgin olive oil
1/4 cup lime juice
1/2 teaspoon salt, to taste
1/4 teaspoon ground black pepper, to taste

This recipe comes from Beany Macgregor, who was the chef of the Hard Rock Cafe on 57th street in New York city. He appeared on the Regis and Kathy Lee show. Hard Rock Guac(Guacamole) image

Steps:

  • Place the avocados in a large bowl and use a large spoon to break them up.
  • Add the remaining ingredients except the chips and raw vegetables.
  • Using a spoon, stir everything together, taking care to leave it slightly chunky.
  • Serve with tortilla chips, raw vegetables, and a nice spicy salsa. Enjoy!
  • Ideas for leftover guacamole:.
  • Guacamole Mayonnaise: Combine 1 cup of mayonnaise with 1/2 cup of pureed guacamole.
  • Guacamole Vinaigrette: Combine 1/4 cup of guacamole with vinaigrette and fresh cilantro to taste.
  • Guacamole Butter: Whip 3/4 pound of softened unsalted butter with 1/2 cup of guacamole. Add chopped cilantro, lemon juice, ground cumin, cayenne pepper, and salt to taste.
  • Chicken Breast Stuffed with Guacamole Butter: Before baking an 8 oz. boneless chicken breast, stuff it with 1/4 cup cup of guacamole butter and spread 2 tablespoons of guacamole butter between the breast and the skin.

6 ripe Hass avocadoes, pitted and peeled
1 1/2 cups tomatoes, seeded and chopped
1 small Spanish onion, chopped
1 tablespoon lemon juice (or lime, freshly squeezed)
1 tablespoon salt
1 teaspoon Worcestershire sauce
2 teaspoons Tabasco sauce
1/4-1 teaspoon cayenne (depending on the heat you want)
3/4 teaspoon garlic, minced (or garlic powder)
3/4 teaspoon ground cumin
tortilla chips, for serving
raw vegetables, for serving

Roasted Corn and Garlic Salsa (Southwest) image

Steps:

  • Preheat oven to 375 degrees F.
  • In a roasting pan, combine corn kernels & sliced garlic & mix well.
  • Drizzle olive oil over the corn, then add the water, salt & pepper, mixing well.
  • Roast corn & garlic, uncovered for 20 minutes.
  • In a bowl, combine tomatoes, corn/garlic mixture, lime juice, jalapeno & cilantro.
  • Stir well, then let the salsa stand for 1 hour at room temperature to develop the flavors.
  • Serve salsa immediately or store in a sealed container in the refrigerator for up to 4 days ~ It is, however, best the day it's made!

2 cups corn (fresh is preferred)
15 large garlic cloves, peeled, sliced thin
2 tablespoons olive oil
2 tablespoons water
1/2 teaspoon salt
1/8 teaspoon ground black pepper, to taste
3 medium tomatoes, round, ripe, seeded, chopped fine
1/4 cup fresh lime juice
1 jalapeno, seeded, minced
1/4 cup cilantro, chopped

  • Using a sharp knife, slice the avocado in half and remove pit (I find the easiest was to do this is to carefully whack the pit with a knife so that it sticks, then pull it out.) Use your knife’s tip to score avocado flesh (don't pierce the skin), making squares, then scoop it into a bowl.
  • Slice the lime into wedges. Squeeze juice over avocado. Add the Worchestershire sauce, salt, garlic and red onion to the bowl.
  • With a spoon (a regular dinner spoon works perfectly), stir gently until ingredients are mostly incorporated. Don't over mix! Chunky guac is happy guac.
