Steps:

  • Combine the tequila, lime juice and simple syrup in a cocktail shaker with ice. (To make a batch of simple syrup, simmer equal parts sugar and water in a saucepan until the sugar dissolves, then cool.) Shake well, then strain into a chilled martini glass; salt the rim, if desired. Garnish with mint.

1 1/2 ounces fresh lime juice

After living in Austin Texas for 10 years, my husband and I perfected the perfect margarita. The secret to success is fresh fruit juice only and it doesn't use any pre-made mixes! Don't skimp and try buying juice. Squeeze it yourself or you won't get the best taste! If you are a real olive lover, add pimento stuffed olives and call it a 'Mexican martini'...delicious! and you won't confuse yours with anyone else's if you add 3 olives on a stirrer. :)

  • Place the ice cubes into a margarita glass. Pour in the tequila, Cointreau, and Grand Marnier. Pour in the lime juice, orange juice, and lemon juice to taste. Garnish with a pimento stuffed olive if desired

Steps:

  • Just before serving, in a half gallon pitcher combine the tequila, the minimum amount of Cointreau or Triple Sec and the lime juice. Taste and add more orange liqueur if you think your margaritas need more sweet oranginess to balance the other flavors. Remember, you're tasting it warm and undiluted; when chilled and diluted, the flavors will be mellower and the lime's tartness will be more attractive.
  • Pour several tablespoons of lime juice onto a small plate and several tablespoons coarse salt onto another. Have martini glasses at hand (chill them for an extra special touch).
  • As your guests ask for their margaritas, invert a glass into the plate with the lime juice to moisten rim, then lightly dip into the plate with the salt. For each drink measure 2 ounces (1/4 cup) of the margarita mixture into a cocktail shaker. If you have a 2-ounce ladle that you can keep in the pitcher, measuring goes much faster. Add ice cubes (5 cubes for 1, 8 for 2, 10 for 3). Secure the lid and top and shake vigorously for 10 to 15 seconds. Strain into the salt crusted glasses and hand off to the lucky recipients

1 750-milliliter bottle silver tequila (use a high-quality, 100 percent agave tequila)
1 to 2 cups (1/3 to 2/3 of a 750-milliliter bottle) Cointreu or Triple Sec
1 cup freshly squeezed lime juice, plus several tablespoons extra for rimming the glasses
Several tablespoons coarse kosher-type salt, for rimming the glasses
About 1 gallon ice cubes

I had these at a friend's house, and they were so good I had to ask for the recipe. She had found it in a magazine, but couldn't remember which one. She had NOT chilled the glasses, but the drinks were just fine anyway. The exact number of servings depends on how much Cointreau is added.

Steps:

  • Just before serving, in a ½-gal pitcher combine the tequila, 1 cup Cointreau,& 1 cup lime juice; taste and add more Cointreau if needed to balance the lime.
  • Pour about 1/4 cup lime juice onto one small plate, and 1/4 cup salt onto another.
  • Have martini glasses (preferably 5 oz) at hand (chilled, if possible).
  • As guests request martinis, invert a glass into the plate with the lime juice to moisten rim, then lightly dip into salt.
  • For each drink measure 2 oz (4 Tbs) of the tequila mixture into a cocktail shaker--do up to 3 drinks at a time.
  • Add ice cubes (5 standard-size cubes for 1 drink, 8 for 2, 10 for 3).
  • Shake vigorously 10-15 seconds and strain into the salt-crusted glasses.
  • Replenish the lime juice and salt in dipping plates as needed.

GRAPEFRUIT MARGARITA MARTINI

I always make my cocktails with fresh pressed juice. I cannot afford any extra empty calories from store bought mixers, who can!! I have a commercial grade juicer so you may need to add extra juice if your hand squeezing since my juicer produces a lot of juice!   • Place superfine sugar, grapefruit and lime juice in cocktail shaker and swirl until sugar mostly dissolves. Pour in tequila, liqueur and at least 4-6 cubes of ice. Shake vigorously for 30 seconds. Strain in sugar rimmed martini glass and garnish with lime wedge or grapefruit section.
