- Melt 1 stick of the butter in a large skillet and saute the red and green peppers and onions until tender. Remove from heat and add the rest of the butter.
- Refresh the frozen corn under cold running water and drain thoroughly. Mix pepper and mixture with corn, and place on a roasting tray place in the oven and roast until golden brown, about 15 to 20 minutes. Season, to taste, with salt and pepper, and serve garnished with chopped parsley.

Steps:
- Preheat the oven to 425 degrees F. Measure a 24-inch length of twine, if using, and cut into 4 even pieces.
- Peel back the husks from the cobs but do not remove completely. Remove all of the silk underneath and discard. Drizzle the cobs with some oil and sprinkle with salt and pepper. Pull the husks back up and around the corn.
- Put the corn directly on the oven rack and roast until the corn is tender and the husks are golden brown, 15 to 20 minutes.
- If using twine, pull the husks back and tie with a piece of string. Transfer the cobs, in their husks, to a serving platter.
FIRE-ROASTED CORN IN A SKILLET
I was going to make a recipe that called for a can of fire-roasted corn. My local store did not carry it, so I made my own.

Steps:
- 1. Heat oil in skillet on high heat. Add drained (or thawed) corn. Spread evenly and leave it alone so that it can start to turn brown.
- 2. Sprinkle with any or all of the seasonings to taste. Stir to mix and continue to let the corn roast. Stir occasionally so that it doesn't burn. Should take close to 10 minutes.
- 3. Remove from heat and let it cool in the skillet. Use warm or store in refrigerator until needed.

- Pull back shucks from each ear of corn and remove silks. Close shucks over the grain and secure firmly with a wire twist-tie. Immerse corn in cold water several minutes, letting shucks get thoroughly soaked.
- Shake off excess water and bury corn in the hot ashes and coals of a fireplace, a charcoal grill or a campfire and leave there about 1 hour, rotating 3 or 4 times to assure even distribution of heat. Remove and test one ear for doneness. When kernels are tender, remove shucks; apply butter and salt.

- Spray eight 12-in. x 10-in. pieces of foil with cooking spray. Place one ear of corn on each piece of foil; spritz corn evenly with butter-flavored spray.
