Steps:

  • Beat butter and sugar until creamy. Add eggs. Stir in flour, cornmeal, baking powder and salt. Add Corn, green chiles, and cheese and mix well. Spoon into a buttered 9x9 baking pan. Bake at 325 for 50 minutes.

Steps:

  • Preheat the oven to 400 degrees F and brush a 9-by-13-inch baking dish with vegetable oil.
  • Whisk the cornmeal, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk the egg, vegetable oil and buttermilk, then fold into the dry ingredients with a rubber spatula until just combined.
  • Transfer the batter to the prepared baking dish and bake until a toothpick inserted into the center comes out clean, 10 to 12 minutes. Transfer to a rack and let cool 15 minutes before serving.

Steps:

  • Preheat the oven to 400 degrees F (375 degrees if using a Pyrex or dark-finish pan). Grease an 8-inch round metal or Pyrex pan or a ceramic souffle dish.
  • Combine the flour, cornmeal, wheat germ, baking powder, and salt in a large bowl.
  • Make a well in the center of the dry ingredients and add the egg, buttermilk, butter, honey, and marmalade. Using a large spoon or dough whisk, stir just until all of the ingredients are moistened yet thoroughly blended; take care not to overmix.
  • Pour the batter into the prepared pan and bake on the center rack of the oven for about 20 to 25 minutes, or until dark golden around the edges and a cake tester inserted in the center comes out clean. The top should feel firm to the touch. Let stand for 30 minutes in the pan before cutting into thick wedges

I went to school 2,000 miles away from my midwestern home and then booked to the opposite coast upon graduating -- I've spent 7 Thanksgivings at various houses because I couldn't afford to go home, so I've tasted a lot of families' stuffings and none of them hold a candle to my mom's. Julia Child's Cornbread Stuffing image

Steps:

  • Prepare cornbread according to mix directions.
  • Break up sausage meat. Saute in a pan for several minutes until gray. Scrape into a large mixing bowl, leaving fat in pan.
  • In pan, saute onions for 5-6 minutes. Add celery, saute for 2 minutes.
  • Add the sauteed vegetables to the sausage, along with the cornbread and bread crumbs. Combine sage and eggs, and pour into mixture. Fold in the melted butter. Season with salt and pepper to taste.
  • Stuff cavite of turkey with mixture and bake according to roaster time. If baking separate from turkey, place mixture in a baking pan, cover with foil, and bake at 350 for 20-30 minutes, maybe even less. Do not overbake otherwise the stuffing will dry out.

  • Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
  • In a 1-quart saucepan, heat the butter over low heat until melted.

Junior's Golden Corn Muffins image

Steps:

  • Preheat oven to 400°F.
  • Line 6 jumbo or 12 regular muffin tins with paper liners or spay them with Pam.
  • Mix flour, cornmeal, baking powder, and salt together in medium-sized bowl and set aside.
  • Cream the butter and shortening in a large bowl (I use Kitchen Aid) with an electric mixer on high for 2 minutes.
  • Then, with mixer still running, gradually add sugar, then eggs, one at a time.
  • Continue beating until the batter is creamed and light yellow colored (may look slightly curdled) and add the vanilla.
  • Reduce mixer speed to low.
  • Beat in half of the flour mixture, then half of the milk, beating about 1 minutes after adding each.
  • Repeat, beating in the rest of the flour mixture, then the rest of the milk.
  • Beat the batter until well blended, about 1 minute more.
  • Spoon into muffin tins, almost up to the top.
  • Bake at 400°F for first 10 minutes.
  • Reduce temperature to 375°F for about 15 minutes or until golden and toothpick comes out clean.
  • Makes one dozen regular muffins or 6 jumbo.

  • In a large bowl mix together the corn meal, flour, salt, and baking powder.
  • In a separate bowl mix together the eggs, butter, and buttermilk. Add to the dry ingredients and stir until well blended.
  • Heat a dry 12 inch cast iron skillet over high heat for 2 minutes. Add corn oil to skillet, swirl oil around to coat bottom and sides. Leave remaining oil in pan. Return to high heat for 1 minute.
