NUTTY PIE-CRUST COOKIES

- In a large bowl, beat butter, flour, confectioners' sugar and salt until crumbly. Beat in cream. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets., Bake 10-12 minutes or until edges begin to brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., Place pecans and coconut in a small bowl; toss to combine. Reserve 1/2 cup coconut mixture. In another bowl, beat butter, cream cheese, salt and, if desired, liqueur until creamy. Gradually beat in confectioners' sugar until smooth. Fold in remaining coconut mixture. Spread over bottoms of half of the cookies; cover with remaining cookies. Place reserved coconut mixture in a shallow bowl. Roll sides of cookies in coconut mixture., Freeze option: Transfer wrapped disks to a resealable plastic freezer bag; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare, bake and fill cookies as directed.

NANA'S RITZ CRACKER PIE (WITH WALNUTS)
Sounds strange, but tastes great! This is my mother-in-laws recipe and my husband insisted I share it with you! Make sure you serve it with whipped cream on top!

Steps:
- Preheat oven to 325 degrees.
- Prepare an 8" pie pan with cooking spray (Pam).
- In a gallon size ziplock bag, crush the 21 Ritz Crackers until almost powder-like.
- Add the finely chopped walnuts and 1 teaspoon baking powder.
- Toss with a fork and set aside.
- In a stand mixer or medium bowl using a hand mixer, beat the 3 egg whites until fluffy.
- Slowly add 1 cup of sugar and 1 teaspoon vanilla. Beat until stiff and glossy in appearance.
- Fold the crackers/nuts into the egg whites and pour into the pie pan.
- Bake for 30 minutes.
- Allow to cool completely in refridgerator and top with whipped topping before serving. (Optional- add chocolate shavings on top). Enjoy!

KARI'S EUDORA WELTY NUTTY PIE

Steps:
- Preheat oven to 375. Spread nuts evenly on the bottom of the 9 inch unbaked pie shell; set aside. In mixing bowl, mix melted butter, vanilla, and flour. Add salt. Add eggs and beat til thoroughly mixed. Add maple syrup, and skim milk. Mix well. Pour the filling over the walnuts in the unbaked pie shell. The nuts will float to the top, use a spatula to gently push them under the liquid. (Making sure they are well saturated with the mix will keep them from burning)
- Bake for 50 to 60 minutes, until a knife inserted in the center comes out clean. Allow to cool for 15 minutes before slicing. May be served with whipped cream. (note-Place in oven with care. I let the mix spill up onto the pie crust edge as I put in the oven. These spots of crust burned -- see picture).
