KNOCK-YOU-NAKED BROWNIES

Knock-You-Naked Brownies image

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-9-inch baking pan.
  • Begin by pouring 1/3 cup evaporated milk into a bowl with the cake mix. Add the melted butter and the chopped pecans. Mix the ingredients together; it'll be pretty thick!
  • Divide the dough in half down the middle. Press half of it into the bottom of the prepared pan to make the first brownie layer. Bake until slightly set, 8 to 10 minutes. Then remove from the oven and set aside.
  • While the brownie layer is baking, in a double boiler (or glass bowl set over a bowl of simmering water) combine the caramels and the remaining 1/2 cup evaporated milk. Stir occasionally until the caramels are totally melted and the mixture is smooth. Pour the caramel mixture over the first baked layer, spreading so it's evenly distributed. Sprinkle the chocolate chips all over the top.
  • Next, on a clean surface or a sheet of waxed paper, press the remaining dough into a square shape slightly smaller than the baking pan. Carefully set it on top of the chocolate chips. Bake for 20 to 25 minutes. Remove the pan from the oven and let the brownies cool to room temperature. Cover the pan and refrigerate the brownies for several hours to allow them to set.
  • When you're ready to serve them (or give them to someone you love!) sprinkle generously with the powdered sugar and cut them into large rectangles before removing from the pan. These are absolutely killer, my friends. Make them for someone you really, really love... or someone you want to love you back.

One 18.5-ounce box German chocolate cake mix (I use Duncan Hines)
1 cup finely chopped pecans
60 caramels, unwrapped
1/3 cup semisweet chocolate chips
1/4 cup powdered sugar, sifted

Steps:

  • 1. Combine softened butter with melted chocolate in food processor adding sugar, process until creamy (you may use stand or hand mixer also.). Add eggs one at a time. Pulse processing after each egg.
  • 2. Add flour with vanilla till just mixed. Add marshmallows, nuts and 1 cup chocolate chips just until mixed. I usually do this by hand so these ingredients don't get pulverized.
  • 3. Pour into 9 X 13 inch , lightly greased (sprayed) pan and bake at 350 degrees for 30 min. When brownies separate from sides of pan and has crust on top, remove from oven and spread the remaining cup of choc chips evenly over top. Give them approx. 5-10 to melt so you can spread them evenly with an off set spatula or the back of a spoon. This is great with ice cream or plain when cool.
  • 4. Please feel free to use a brownie mix (like the SAM's club variety or Walmart brand). Follow the instructions for the brownie on the box you will still need to add chips, nuts, and marshmallows.

Steps:

  • Get prepared
  • Arrange the oven racks so one is in the center position. Preheat the oven to 400°F.
  • Spray the bottom and sides of an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper 8 inches wide and 15 to 16 inches long. Lay the paper in the pan so it travels up and over two of the sides. Spray the paper with nonstick cooking spray.
  • Make the batter
  • Pour 1 to 2 inches of water into the bottom of a small saucepan and choose a bowl that fits over the saucepan to make a double boiler. Make sure the water is not touching the bottom of the bowl; if it is, pour some water out. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
  • Unless you are using chocolate chips, roughly chop the chocolate. Put the butter and chocolate into the bowl of the double boiler and melt them, using a heat-proof rubber spatula to stir and scrape down the sides of the bowl so the chocolate doesn't burn.
  • Remove the bowl from the double boiler and wipe the bottom of the bowl so no water drips. Add the sugar, vanilla, and salt and whisk them in. Add the eggs one at a time and whisk until the batter is shiny and smooth, 1 to 2 minutes. Add the flour and stir with a rubber spatula until no flour is visible.
  • Bake the brownies
  • Using a rubber spatula, transfer the batter to the prepared pan. Use the spatula to smooth out the top of the batter.
  • Place the brownies on the center rack of the oven and bake for 20 minutes, rotating the pan from front to back halfway through the baking. Remove the brownies from the oven and cool on a cooling rack. The tops will appear dry, but the insides will remain fudgy if you poke the center with a toothpick or cake tester. Holding the sides of the parchment paper, lift the brownies out of the pan and place them on a cutting board. Using a large knife, cut the brownies into 16 equal pieces.
  • Store the brownies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
