EVERYTHING BUT THE KITCHEN SINK PASTA

I was wanting to fix supper for myself and the husband and we were low on somethings but had an random assortment of things I had stocked up on. The husband loves pasta so I took stock of what I had on hand and this was the end result.

Steps:

  • Cook 2 cups bow tie pasta, while that is cooking dice up the kielbasa, onion and pepper. Press or mince the garlic. With a little butter or olive oil brown the meat and garlic, saute the veggies till soft add the sauce and cooked pasta and seasonings let cook on med-low heat till warmed threw and flavors have had time to blend. Serve with garlic bread and cheese of choice.

1/2 cup(s) pasta sauce of choice
2 cup(s) bow-tie pasta, cooked and drained
1/2 medium red bell pepper
1/2 small sweet onion
1/2 tablespoon(s) italian seasoning
2 clove(s) garlic, pressed

DRUNKEN RED WINE PASTA

Drunken Red Wine Pasta image

Steps:

  • Bring the wine and 8 cups water to a boil in a large pasta pot. Add the orecchiette and cook according to the package instructions. Drain, reserving some of the cooking liquid.
  • As the pasta cooks, heat a large saute pan over medium heat and brown the pancetta. Remove from the pan with a slotted spoon, leaving the fat behind. Add the shallots and cook until softened, 3 to 4 minutes. Add the pancetta back to the pan as well as the mascarpone and 1/4 cup of the reserved pasta cooking liquid (water/wine mixture). Stir to combine into a sauce, then mix in the cooked orecchiette; season with salt and pepper. Garnish with the thyme leaves if using.

1 bottle red wine, such as Chianti
1 pound orecchiette pasta
3 ounces pancetta, diced
1/4 cup chopped shallots (about 2 shallots)
1/2 cup mascarpone cheese
Kosher salt and freshly ground black pepper
1 teaspoon fresh thyme leaves, for garnish, optional

  • Cook the pasta according to the package instructions just to al dente and immediately shock in ice water. Drain and set aside.
  • Make the dressing by whisking together the oil, vinegar, sugar, salt, basil, and minced garlic. Add the onion and stir to combine (see the blog post for why we do that). Set aside.
  • In a large bowl, toss together the pasta, sausage, artichokes, black olives, bell pepper, tomaotes, and parmesan cheese. Add the dressing with the onions and toss to coat. Add additional salt and pepper to taste. Serve immediately at room temperature or refrigerate to allow the flavors to develop more. If refrigerated, be sure to toss the salad again before serving and adjust seasoning to taste once more.
