KOREAN CHICKEN SALAD image

Steps:

  • Cut chicken breasts in half. Combine marinade ingredients. Thoroughly coat chicken pieces. Place chicken in shallow roasting pan, pour remainder of marinade over top and cook uncovered at 400F for 40 minutes, turning at half time. Cool cooked chicken and cut in thin strips. Prepare salad veggies and place in large bowl. Prepare dressing. If desired, add cooked marinade leftover from chicken in with dressing. Just before serving, toss the chicken and veggies with dressing. Sprinkle with seeds and almonds.

3 lbs. boneless skinless chicken breasts
Marinade:
4 tbsp. soy sauce
2 tbsp. oil
2 tbsp. sherry or white wine
1/2 tsp. ground ginger
1/2 tsp. cinnamon
2 cloves garlic, finely chopped
Salad veggies:
2 cups head lettuce (iceberg), shredded
1 cup cucumber, thinly sliced
1 cup carrots, thinly sliced
2/3 cup green onion, chopped
1 cup bean sprouts
3/4 cup slivered almonds, toasted & salted
2 tbsp. sesame seeds, toasted
Dressing:
1/2 tsp. dry mustard
1/2 tsp. salt
1/2 tsp. Tabasco sauce
1 tbsp. soy sauce
1/2 cup vegetable or corn oil (add 1 tsp. sesame oil)
4 tsps. lemon juice

A kebab always goes down well at a BBQ, and this Korean chicken with sweet, spicy and sticky glaze is our new favourite. Scatter over spring onions to serve

Korean chilli, sesame & honey chicken image

Steps:

  • Toss the chicken in the soy sauce, sesame oil and ginger. Thread each thigh on two long metal skewers, so that each skewer pierces one side of the thigh. Keep threading the chicken, making sure it's packed onto the skewers tightly. Chill until you're ready to cook. Mix the ingredients for the glaze.
  • Heat the BBQ. If using a coal BBQ, wait for the coals to turn ashen before you start cooking. Cook the kebab for 5-8 mins on each side (depending on the heat). Once nicely charred but not fully cooked through, start painting on the glaze. The honey will catch if cooked for too long - the key to nice sticky chicken is applying the glaze in layers, turning the kebab often.
  • Once the glaze has been used up and the chicken is cooked through (it'll take about 20 mins in total), transfer to a plate and leave to cool for 5 mins before serving scattered with spring onions.

4 tbsp Korean chilli paste (gochujang) or use a mixture of 3 tbsp ketchup and 1 tbsp sriracha chilli sauce
2 tbsp honey
juice ½ lime
1 tbsp soy sauce
1 tsp sesame oil
2 tbsp sesame seeds

Grind the pine nuts in a blender or food processor (or finely mince them with a knife). Add the remaining dressing ingredients and blend well. Refrigerate while preparing the chicken and vegetables.
  • In a medium size pot, bring 5 cups of water and the aromatic vegetables to a simmer over medium heat. Add the chicken breast and simmer over medium low heat for about 8 -10 minutes (increase the time if cooking more than 1 chicken breast). Remove the chicken and allow it to cool.
  • When cool enough to handle, shred and lightly season with salt. Refrigerate while preparing vegetables. Wash salad vegetables in ice water and drain well. Cut them into desired sizes if needed.
