LAZY BANANA MUFFINS (IN THE OVEN IN JUST OVER 5 MINUTES)

A yummy easy muffin - I stumbled on in an attempt to use up the left over sour cream & some browning bananas - I whipped out my trusty blender and threw this togeather with some items I usually keep in the cupboard. In just over 5 minutes they were in the oven....and most of that time was spent trying to separate the patty papers from each over.

Lazy Banana Muffins (In the Oven in Just over 5 Minutes) image

Steps:

  • Pre heat oven to 180 c of 350f.
  • Grease & line muffin tins with liners.
  • In a blender place - egg, bananas, golden syrup, lite sour cream, canola oil & vanilla.
  • Blend until smooth.
  • In a large bowl combine remaining dry ingredients & make a well in the centre.
  • Pour banana blend into the well and mix until JUST combined (Over mixing will make a tough muffin and exhausts a chef who just wants to go put her feet up).
  • Spoon equal amounts into the 12 holes.
  • Bake for 20 minutes. Allow to cool in tin for 5 minutes before turning out on a rack to cool.
  • Yummy warm with a coffee.

1/3 cup sour cream (low fat or low fat plain yoghurt)
1 tablespoon canola oil
1 teaspoon vanilla
2 cups self raising flour
1/2 cup chocolate chips
1/2 cup walnuts (roughly chopped)

LIGHTER BANANA MUFFINS

This banana bread has no oil, or butter of any sort. It doesn't need it! Because this bread isn't greasy it makes great muffins without the greasy bottoms I have experienced through other recipes. The walnuts are optional.

Lighter Banana Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 10 muffin cups.
  • In a medium bowl, combine eggs and bananas. In a separate bowl, mix together flour, salt, sugar and baking soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.

  • In a medium bowl, completely mash banana with a potato masher or fork. Add sugar, egg white, and oil. Stir with a spoon until just combined (mixture will still be lumpy).
  • Add flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir until just combined. If desired, stir in optional chocolate chips.
  • Divide mixture between the four prepared muffin cups, filling each about 2/3 of the way full. Bake for 18 to 25 minutes, until a toothpick inserted into the center of the muffins comes out mostly clean and the tops of the muffins begin to turn golden.

  • Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside. In a large bowl or in the bowl of your stand mixer, mash the bananas. On medium speed, beat or whisk in the melted butter, brown sugar, egg, vanilla extract, and milk. Pour the dry ingredients into the wet ingredients, then beat or whisk until combined. If adding nuts or chocolate chips, fold them in now. Batter will be thick.
  • Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 21-23 minutes, give or take. (For mini muffins, bake 12-14 total minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days or in the refrigerator for up to 1 week.
