GRANDMA'S BEST LAZY DAISY OATMEAL CAKE

Oatmeal and brown sugar makes this cake sweet, yet comforting. After you bake the cake, spread a homemade caramel frosting on top to make it even more delicious. The best part about this cake recipe is that it takes very little effort to whip up, making it the ultimate lazy day dessert. From Bakeaholic Mama.

Grandma's Best Lazy Daisy Oatmeal Cake image

Steps:

  • 1. Pour water over oats and cover and let stand 20 minutes. Beat butter til creamy,gradually add sugar and beat til fluffy. Blend in eggs,vanilla and oats and mix well.
  • 2. Add flour, baking soda,salt,cinnamon and nutmeg to creamy mixture. Mix well. Pour into greased and floured 9" pan. Bake at 350 degrees F for 50-55 minutes
  • 3. CARMEL FROSTING: Cook sugar and cream until it forms a soft ball. Add vanilla and butter. Cool. Beat til consistency to spread.

1 1/4 c boiling water
1 c oatmeal, uncooked
1/2 c margarine
1 c brown sugar
1 tsp vanilla extract
2 eggs
1 c sugar or splenda
1 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
COOKED CARMEL FROSTING
1 1/2 c brown sugar
2 Tbsp butter
3/4 c milk or cream
1/2 tsp vanilla

Steps:

  • In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine frosting ingredients; spread over warm cake. Broil 4 in. from heat until lightly browned, about 3-4 minutes.

Steps:

  • In a shallow bowl soak oats in boiling water for 20 minutes.
  • Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
  • Beat in eggs and vanilla.
  • Sift and measure flour, sifting again with the soda and spices.
  • By this time the oats will be soaked and cool.
  • Remove beaters from creamed mixture and fold in soaked oats.
  • Sift flour mixture over and fold in.
  • Turn in a buttered 9x9" pan and bake at 350°F for 40-50 minutes .
  • Mix all the topping ingredients.
  • Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
  • Watch carefully.

  • Using a mixer, cream butter until creamy.
  • Gradually beat in sugars, and beat until light.
  • Blend in eggs and vanilla.
  • Mix flour, baking soda, salt, and spices.
  • Remove beaters from creamed mixture.
  • Stir in rolled oat mixture.
  • Fold in flour mixture. Blend well.
  • Pour batter into a greased and floured 9" square cake pan.
  • Bake for 45-55 minutes Remove from oven, but DO NOT REMOVE CAKE FROM PAN.
  • Topping:.
  • Combine all melted butter. brown sugar, canned milk and nuts. Spread over the hot cake.
  • Return the cake to the oven, under the broiler. Broil until the topping is bubbly and tinged with gold. Watch it as it will burn easily.

  • Preheast oven top 350 degrees. Soak oatmeal in boiling water for 20 minutes. Cream butter, add sugars and beat until fluffy. Add vanilla and eggs, blend. Add oatmeal and beat well. Sifh\t dry ingredients together and add to oatmeal mixture. mix well. bake in 9x9 square pan 50-55 minutes.
  • Combine frosting ingredients in saucepan over medium heat. Spread over hot cake. Put under broiler until lightly browned, about 2-3 minutes.

  • Stir together boiling water and rolled oats in a small heatproof bowl; let stand until room temperature, about 30 minutes, stirring occasionally to soften oats.
  • Meanwhile, whisk together flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl. Beat butter, granulated sugar, brown sugar, and vanilla in bowl of a stand mixer fitted with a paddle attachment on high speed until light and fluffy, 3 to 4 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour mixture in 2 additions, beating on low speed until just combined. Beat in oatmeal mixture on low speed until just combined.
  • Scrape bowl, and stir well with a rubber spatula. Pour batter into prepared pan. Bake in preheated oven until a wooden pick inserted into center comes out clean, 30 to 35 minutes.
