LIMONCELLO
For the perfect summer pick-me-up, make Giada De Laurentiis' Limoncello, or lemon liqueur, at home with her recipe from Everyday Italian on Food Network.

Steps:
- Using a vegetable peeler, remove the peel from the lemons in long strips (reserve the lemons for another use). Using a small sharp knife, trim away the white pith from the lemon peels; discard the pith. Place the lemon peels in a 2-quart pitcher. Pour the vodka over the peels and cover with plastic wrap. Steep the lemon peels in the vodka for 4 days at room temperature.
- Stir the water and sugar in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely. Pour the sugar syrup over the vodka mixture. Cover and let stand at room temperature overnight. Strain the limoncello through a mesh strainer. Discard the peels. Transfer the limoncello to bottles. Seal the bottles and refrigerate until cold, at least 4 hours and up to 1 month.
LIMONCELLO

- Grate the zest from the lemons using a Microplane grater, taking care to leave the pith behind. Place the zest in a 3-quart pitcher. Pour the vodka over it and stir. Cover with plastic wrap and set in a spot where it won't be disturbed, at room temperature, and let steep 1 week.
- Combine 3 1/2 cups water and the sugar in a large saucepan and cook over medium heat until the sugar dissolves, stirring occasionally, about 10 minutes.
- Let cool completely, then pour the syrup into the pitcher with the zest and stir. Cover tightly again and let stand for 24 hours. Strain through a fine-mesh sieve and discard the solids. Pour into clean bottles with tight-fitting caps. Refrigerate until well chilled, at least 4 hours or up to 1 month.
LIMONCELLO ( KAT )
I love lemon anything, and I was watching Giada on Food Network one day and she was making a lemon dessert and used limoncello, she also said she makes her own, so I went and pulled up her recipe for Limoncello to give it a try , here it is, this recipe is from Giada on www.foodnetwork.com, the photo is mine though

- Peel lemons, do not get any of the white pith on the peels,( I use my veggie peeler) place peels in a 1/2 gallon plastic or glass jar, pour the bottle of vodka over, cover with plastic wrap or lid, let set for 72 hours.
- In a medium sauce pan over medium heat add water and sugar, heat until sugar is completely dissolved. Let cool about 20 minutes and pour into vodka and lemon peels. Let set for 24 hours, strain with a mesh strainer place into jars and chill.
- ***NOTE*** after I peeled the lemons I juiced them and poured the juice into ice trays to use in other drinks or dishes that need lemon juice.

I made the Limoncello off food network, and of course I posted it on here, Then several of us ladies started talking about it being in a pound cake, so here it is. And I must say this is yummy, a great lemon flavor

- 1. **** you can use the homemade limoncello ( https://www.justapinch.com/recipes/drink/cocktail/limoncello-kat.html?p=1) or store bought
- 2. Preheat oven to 350. In a large bowl add butter and sugar and cream until smooth. Add eggs one at a time and beat in between each one. Add flour , salt and baking powder, mix well. Add vanilla extract and limoncello, mix well.
- 3. Pour into a 6 cup loaf pan sprayed with cooking spray or use a cup cake pan. Bake 40 - 45 minutes or until a toothpick comes out clean.
- 4. Place on a wire rack to cool. Poke holes in cake with a fork and drizzle some limoncello over it, about 2 tablespoons ( optional) Make glaze, by adding limoncello into confectioners sugar, make as thick or thin as you want, drizzle over cake ( optional on the glaze too)
LIMONCELLO

- Zest the lemons, and place zest into a large glass bottle or jar. Pour in vodka. Cover loosely and let infuse for one week at room temperature.
- After one week, combine sugar and water in a medium saucepan. Bring to a boil. Do not stir. Boil for 15 minutes. Allow syrup to cool to room temperature.
- Stir vodka mixture into syrup. Strain into glass bottles, and seal each bottle with a cork. Let mixture age for 2 weeks at room temperature.
- Place bottled liqueur into the freezer. When icy cold, serve in chilled vodka glasses or shot glasses.

- Pare the zest from all the lemons, taking care not to include any white pith. Put the zest in a large clean jar and pour over the vodka. Cover with a tightly fitting lid and leave for a week, shaking the jar each day.
- Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved. Add the vodka and peels and leave for a further week, shaking the jar regularly.
- Strain into decorative bottles, adding a few strips of lemon zest to each bottle.
