CALABAZA CON POLLO (SQUASH WITH CHICKEN)

This is a wonderful chicken and vegetable dish that I grew up with in Texas. I love the way my mother cooks so I asked her for the recipe but of course she grew up not using measuring utensils so this recipe is my interpretation of her recipe. Calabaza con Pollo (Squash with Chicken) image

Steps:

  • 1. Wash chicken and boil until cooked, set aside.
  • 2. Wash all squash, cut into cubes, set aside.
  • 3. Wash tomato, cut into cubes, set aside
  • 4. Dry Spice Mix - Mix salt, pepper, garlic powder and cumin in bowl, set aside.
  • 5. In large pan, add oil, tomato, all squash and onions. On medium-high heat (#7 if you have a dial from 1-10) saute for approximately 10 minutes or until everything look lightly tender.
  • 6. Add drained can corn, tomato sauce and dry spice mixture.
  • 7. Add chicken and 2 cups of chicken broth from the chicken boil.
  • 8. Gently mix all the ingredients to coat everything well. Cover and let simmer on medium-low heat (#3 on dial that has 1-10) for approximately 20-30 minutes. Enjoy!

2-3 lb chicken thighs, skinless and boneless
1 medium green calabaza squash
1 medium zucchini
1 medium yellow squash
1 medium yellow onion
2 Tbsp cooking oil
1 Tbsp salt
2 tsp black pepper
3 tsp garlic powder
3 tsp cumin
1 medium tomato
1 can(s) 15 oz. canned whole kernal corn (drain juice)
1 can(s) 8 oz. tomato sauce

Herbed Chicken and Squash image

Steps:

  • Position rack in lower third of oven; heat oven to 400°F. Season chicken with 1 tablespoon chopped rosemary, 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a bowl, toss squash with 1 teaspoon oil. In a second bowl, toss onions with 2 teaspoons vinegar and remaining 1 teaspoon oil. Coat a rimmed sheet pan with cooking spray. Place chicken on pan bone side up; spread squash and onion in a single layer around chicken; sprinkle vegetables with remaining 1 tbsp chopped rosemary, 1/2 teaspoon salt and 1/4 teaspoon black pepper; roast 15 minutes. In second bowl, combine preserves, mustard, ginger, garlic and remaining 1 teaspoon vinegar. Flip chicken and brush with apricot-mustard sauce; turn veggies; roast until chicken's internal temperature reaches 165°F, 10 to 15 minutes more. Divide chicken and veggies among 4 plates; garnish each with a sprig of rosemary.

4 bone-in, skinless chicken breasts (about 2 1/2 pounds)
2 tablespoons chopped fresh rosemary, divided, plus 4 sprigs for garnish
1 teaspoon salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 pound peeled, seeded and cubed butternut squash
2 teaspoons canola or olive oil, divided
3/4 pound cipollini or sweet onions, halved if large
3 teaspoons balsamic vinegar, divided
Vegetable oil cooking spray
2 tablespoons apricot preserves
2 teaspoons Dijon mustard
2 teaspoons chopped ginger
1 clove garlic, chopped

LINDA'S CUCUZZA SQUASH WITH CHICKEN AND PEPPERONI

I recently discovered Cucuzza squash at our local farm store. It looks like a pale green baseball bat. About the same size. Cucuzza is an Italian squash, now being grown commercially in Louisiana. It must be peeled and seeded. If you cannot get cucuzza you might substitute zucchini. Cucuzza has a mild flavor but a firmer flesh than zucchini.

Linda's Cucuzza Squash with Chicken and Pepperoni image

Steps:

  • Saute onion in EVOO. Add garlic and cook until garlic is fragrant. Add chicken and cook until no longer pink. Add cucuzza and stir until tender. (about 5 minutes) Form hot spot and cook tomato paste. Add tomatoes, basil, salt and pepper and water. Stir and simmer about 10 minutes. Correct seasoning if necessary. Cook until thickness desired. Remove from heat. Stir in cheese and fresh torn basil. Enjoy!

A skillet meal that's quick and easy to make. It's a good way to use up that leftover rotisserie chicken. Great served with a piece of naan.

Delicata Squash and Chicken Skillet image

Steps:

  • Trim ends off delicata squash. Slice in half lengthwise and scrape out the seeds. Discard ends and seeds, but leave the skin on. Place the squash cut-sides down on a cutting board and cut into thin slices.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add squash, onion, and apple; season with salt and pepper. Cook, tossing occasionally, for 3 minutes. Cover, reduce heat, and cook until squash is tender, about 5 more minutes, tossing occasionally.
  • While the squash is cooking, combine chicken, bell pepper, juice from the lemon wedge, garlic, mustard, maple syrup, remaining 1/2 tablespoon olive oil, sage, thyme, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a small bowl. Stir until well combined and chicken is coated.
  • Add chicken mixture to the skillet. Add cashews and toss to combine. Cook until chicken is heated through, about 1 minute.

Steps:

  • In a large nonstick skillet, melt butter in the oil over medium high heat. Season chicken with half of the salt and half of the pepper, and add it to skillet. Cook until lightly browned, about 2 minutes per side. Transfer to large plate or platter, and cover to keep warm.
  • Pour off fat from skillet, and add squash, zucchini, and tomato. Season with remaining salt and pepper. Cook and stir over medium-high heat until squash is slightly softened, about 3 minutes. Reduce heat, and return chicken to skillet. Cover partially. Cook until squash is soft, and chicken is white throughout but still juicy, about 5 minutes longer.
  • Transfer chicken to platter, and cover with foil to keep warm. Raise heat to high. Cook vegetable mixture, stirring often, until almost all of the liquid has evaporated, about 2 minutes. Arrange vegetables around chicken, and serve.
