LOADED HASH BROWN POTATO CASSEROLE

Loaded baked potato in a casserole dish but made easier using hash browns!

Loaded Hash Brown Potato Casserole image

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and break into small pieces.
  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x4-inch loaf pan with cooking spray.
  • Mix sour cream, butter, and seasoning blend together in a bowl. Layer 2 1/2 hash browns in the prepared dish. Spread 1/3 of the sour cream mixture over hash browns. Sprinkle 1/4 cup Cheddar cheese and 1/3 of the bacon on top. Repeat layers twice more. Sprinkle chives and pepper over casserole. Cover with aluminum foil.
  • Bake in the preheated oven until cheese is golden brown and casserole is heated through, about 1 hour.

  • Preheat oven to 350 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray. In a large bowl, mix all ingredients. Spread into baking dish. Bake uncovered for 40 minutes or until bubbly and top is golden.

Steps:

  • Heat 2 Tbsp. oil in large cast-iron skillet on medium-high heat. Add mushrooms and onions; cook 5 min. or until mushrooms are tender, stirring frequently. Spoon mushroom mixture into bowl; cover to keep warm.
  • Heat oven to 375°F. Heat 2 Tbsp. of the remaining oil in same skillet. Add hash browns; cook 5 to 7 min. on each side or until golden brown on both sides, drizzling with remaining oil just before turning the hash browns over. Remove from heat.
  • Spread chili, then salsa over hash browns; top with mushroom mixture, ham and VELVEETA.
  • Bake 10 min. or until toppings are heated through and cheese is melted.

Steps:

  • Boil four of the eggs for five minutes at a rolling boil then take off the heat and rinse with cold water then peel.
  • Grate the onion with a cheese grater.
  • In a mixing bowl mix together the Potatoes, sausage, onion and one egg.
  • Divide the mixture into four parts and one at a time flatten out 1/4 of the mixture onto the palm of your hand, place the egg in the middle and wrap the mixture completely around the egg.
  • Roll the eggs in bread crumbs for a light coating and then place them on a baking sheet.
  • Bake at 425 degrees Fahrenheit for 20 minutes and enjoy!

Steps:

  • Preheat oven to 350 degrees.
  • Mix potatoes, chedder cheese soup, and ground black pepper in large bowl.
  • Line mini muffin trays with bacon, covering all sides including the bottom.
  • Fill each bacon lined cup to the top with hash brown mixture.
  • Scoop 1/2 tsp chive and onion cream cheese and place on top of each filled cup.
  • Bake for 40 minutes or until bacon has reached desired level of crispiness.
