LOW CARB PIZZA - ZUCCHINI "CRUST"

I made this up last night, because we were hungry for pizza while doing the low carb thing. It's not as good as real pizza with bread crust, but we enjoyed it a lot. It satisfied our craving, and my husband asked me to make it again tonight. Hope you like it, too!

Low Carb Pizza - Zucchini

Steps:

  • Preheat oven to 375 degrees.
  • Spray a pizza pan with cooking spray.
  • Mix well grated zucchini and 2 eggs.
  • Place zucchini mixture on the pizza pan, spreading out to the edges of the pan.
  • Bake at 375 degrees for 30 minutes.
  • Spread pizza sauce on partially-cooked"crust" to within about 1/2 inch of the edge.
  • Top with pepperoni and/or other pizza toppings.
  • Sprinkle both cheeses on top.
  • Bake for another 30 minutes or until cheese begins to brown.

4 medium zucchini, grated
2 eggs
1 (14 ounce) jar pizza sauce
pepperoni (or whatever your favorite pizza toppings are)
1 cup grated mozzarella cheese
1 cup grated cheddar cheese

Low-Carb Zucchini Pizza Casserole image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x13-inch baking dish.
  • Place shredded zucchini in a colander and sprinkle salt on top. Press down to drain as much water as possible. Let sit for 10 minutes. Transfer to a large bowl.
  • Add eggs, 1/2 of the mozzarella cheese, Parmesan cheese, Italian seasoning, and garlic powder to the zucchini. Mix well. Press mixture into the prepared baking dish.
  • Bake uncovered in the preheated oven for 20 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Mix pizza sauce with cooked beef and spoon over zucchini mixture in the baking pan.
  • Sprinkle remaining mozzarella cheese over the meat. Top with pepperoni slices.
  • Return baking dish to the hot oven and bake until mozzarella cheese is melted, 15 to 20 minutes more.

  • Grate the zucchini on the fine side of a box grater. It's important that you finely grate it. Set a paper towel over a strainer and place the zucchini in the paper towel. Sprinkle it evenly with kosher salt. Put the strainer with the zucchini in it over a bowl so it can drain.
  • On top of the zucchini- set something heavy. I used 2 cans of beans to weigh it down. Let it sit for at least a 1/2 hour. An hour would be best.
  • After you've let the zucchini drain, using the paper towel, wring some of the water out. You'll get about 1/2 cup of water between the drain time and wringing it out.
  • Put the zucchini in a large bowl with the egg, almond flour, part skim mozzarella, oregano, basil, garlic powder and pepper. Mix it together until it holds together nicely. If you feel it is needed, you can add another tablespoon or so of almond flour.

  • Place shredded zucchini on a plate lined with a few layers of paper towel. Sprinkle with one tablespoon of salt. Set aside for 10 minutes. Squeeze the excess moisture out of the zucchini by wrapping it up in the paper towels or clean cheese cloth and squeezing out all the excess water.
  • In a medium bowl, combine the shredded zucchini, flour, egg, cheese and Italian spices. Combine mixture with a spoon until fully incorporated then transfer mixture on to greased parchment paper. Press the dough into the desired shape and thickness (we like 1/4'' thickness) on the greased parchment paper.
  • Bake for about 10 minutes until the crust looks set and the bottom is starting to brown. Carefully remove the pizza crust from the oven and top with sauce, cheese, and toppings if desired. Return to oven and bake for another 5-7 minutes or until the cheese is melted and bubbly.
