FRENCH TOAST FRIED CHICKEN SANDWICH
Steps:
- In a bowl, combine the maple syrup, mustard and a few shakes of hot sauce. Set aside.
- Thin out the pancake batter a little bit with the milk. Set aside.
- Preheat a deep fryer to 350 degrees F.
- In a bowl, combine the flour, salt, garlic powder, onion powder, cayenne, chili powder and paprika. Dip the chicken in the egg, then in the flour to coat. Fry the chicken until crispy and cooked through, about 10 minutes. Place the chicken on a wire rack or paper-towel-lined plate to drain the excess oil.
- Melt the butter in a large skillet set over medium heat. Dip the brioche slices in the prepared pancake batter and cook until lightly browned on both sides.
- Place a chicken thigh on one piece of bread, drizzle with some of the mustard sauce, and then top with another piece of bread. Repeat for the remaining chicken and bread. Spoon more mustard sauce over the top, then cut the sandwiches in half and serve.

- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.

- Whisk eggs, 3 tablespoons milk, white sugar, and vanilla extract together in a shallow bowl until smooth.
- Heat 1/4 inch of oil in a large saucepan over medium heat.
- Dip 4 pieces of bread in egg mixture and fry until golden brown, about 2 minutes per side. Repeat with remaining pieces.
- Combine 2 tablespoons of milk with custard powder in a small bowl; stir until smooth. Bring remaining milk to a boil in a small saucepan. Stir custard mixture into the saucepan. Reduce heat and cook, stirring frequently, until custard thickens, about 5 minutes.
- Place 8 bread toasts on a shallow tray. Spread custard over each piece. Cover with remaining 8 toasts to form a sandwich. Dust with confectioners' sugar. Top each sandwich with a dollop of whipped cream and a strawberry. Insert a toothpick through the fruit to hold the sandwich together.

- Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
- Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
- Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.

- In a nonstick skillet scramble 2 eggs in 1 tsp butter till done to your liking.
- Remove eggs and set aside and wipe out skillet.
- Assemble the sandwiches with one slice of swiss cheese, 2 slices of ham, 1 scrambled egg, top with another slice of cheese.
- Break remaining egg into a bowl with 1 tsp milk and mix well.
- Brush the sandwiches liberally with the egg wash with a pastry brush (but don't saturate the bread) and grill over medium/medium high heat in a nonstick skillet in 1 tsp of butter till golden brown. (grill the egg side down first and the melted cheese will help hold the sandwich together when it is time to flip it)Add another tsp butter and flip carefully to grill other side until golden.
- Serve with grape jelly or maple syrup on the side.
