MAPLE PRALINES
This recipe rekindles memories of my grandfather and his love for making maple syrup. When I was in college, my mother would send me a package of her pralines during sugaring season. They were so popular with my friends, I barely managed to tuck away a few for myself.

- In a heavy 1-qt. saucepan, combine sugar, cream and syrup. Cook and stir over medium heat until mixture boils. Reduce heat to medium-low. Cook, uncovered, until a candy thermometer reads 234° (soft-ball stage), stirring occasionally., Remove from the heat. Add butter; do not stir. Cool, without stirring, to 160°. Stir in pecans. Beat vigorously with a wooden spoon until mixture just begins to thicken but is still glossy. Quickly drop by spoonfuls onto waxed paper. Cool. Store in an airtight container.

MAPLE GLAZED WALNUTS

- Preheat a dry skillet over a medium-high heat. Add the walnuts, maple syrup and salt. Cook, stirring frequently, until syrup is caramelized and nuts are toasted, about 3 minutes. Let cool.
CHOCOLATE MAPLE WALNUT PRALINE
Steps:
- Preheat the oven to 325 degrees.
- Toast the walnuts on a baking sheet in the preheated oven for 8 minutes. Remove from the oven and cool to room temperature.
- Heat the maple syrup in a 1 1/2-quart saucepan over medium-high heat. When the syrup begins to boil, reduce the heat to medium and allow the syrup to continue to boil and thicken for 10 minutes, stirring occasionally with a metal spoon. Remove the very hot syrup from the heat. Immediately add the walnuts to the syrup and stir to combine. Transfer the glazed walnuts to a baking sheet with sides. Use a metal spoon to spread the walnuts evenly over one half of the baking sheet. Set aside.
- Place the sugar and lemon juice in a 3-quart saucepan. Stir with a whisk to combine (the sugar will resemble moist sand). Caramelize the sugar by heating for 10 to 10 1/2 minutes over medium-high heat, stirring constantly with a wire whisk to break up any lumps (the sugar will first turn clear as it liquefies, then light brown as it caramelizes. Remove the saucepan from the heat, add the unsweetened chocolate and stir to dissolve. Immediately and carefully pour the caramelized mixture over the walnuts, covering all the nuts. Allow to harden at room temperature for at least 30 minutes.
- Invert the praline onto a clean, dry cutting board (it should pop right out of the baking sheet), this will keep the shiny side looking shiny after cutting. Use a sharp serrated slicer to cut (use a sawing motion) the praline into desired size pieces. Store the pralines in a tightly sealed plastic container until ready to devour.
VERMONT MAPLE BREAD PUDDING WITH WALNUT PRALINE
There are few things better than rich and custardy bread pudding topped with sweet and sticky praline, but pair this dessert with vanilla ice cream and you've reached nirvana. Another option: skip the ice cream and serve this dish for brunch. If you need to accommodate a nut allergy, just leave the walnuts out; the caramelized sugar topping will provide plenty of crunch.

- Coat a rimmed baking sheet with nonstick spray. Stir the sugar and water in a heavy small saucepan over medium heat until the sugar dissolves. Increase the heat to high and boil without stirring until the mixture turns deep amber color, occasionally swirling the pan and brushing down the sides with a wet pastry brush, about 7 minutes. Stir in the nuts. Quickly spread the mixture on the prepared sheet. Cool, then chop the praline into small pieces.
- Whisk the eggs, cream, sugar, 1 cup maple syrup, and the vanilla in a large bowl to blend. Add the brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally.
- Preheat the oven to 375°F. Butter a 13 by 9-inch baking dish. Transfer the bread mixture to the prepared dish. Bake until puffed and golden and a toothpick inserted into the center comes out clean, about 40 minutes. Cool slightly.
- Cut pudding into 6 to 8 pieces. Place 1 piece on each plate. Place a scoop of ice cream atop the pudding, drizzle with maple syrup, sprinkle with praline, and serve.
- The PRALINE can be made 1 day ahead. Store in airtight container at room temperature.

- In a saucepan, Mix brown sugar and flour. Add maple syrup, butter and salt. Heat until butter melts, stirring constantly.
- In a medium bowl, beat eggs with maple flavoring. Stir in sugar mixture. Pour into unbaked pie shell and sprinkle with walnuts.
- Bake in the preheated oven for 40 to 45 minutes, or until filling is set.

MAPLE PRALINES
I first made these as a teenager using the 1940 Edition of the Prudence Penny cookbook published by the San Francisco Examiner. I loved them then, and still do now! A pretty easy way to ease into candymaking. Cooking time is cooling time.

- Boil the sugar, milk, and syrup to the soft ball stage (238f).
- Remove from heat and allow the mixture to cool.
- When it is lukewarm, beat until it is smooth and creamy.
- Stir in broken nutmeats.
- Drop by spoonfuls onto buttered parchment or wax paper, making mounds.
- Press a half walnut or pecan on top for decoration if desired.

- Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.

Original Pralines made with Pecans are traditional from the South. I grabbed a bag of nuts one day and did this recipe with Walnuts. Wow, turned out a little lighter and less sweet taste. Great! - Combine sugars and milk in saucepan over medium heat. Stirring, with a wood spoon, do not scorch milk.
- Spray baking non-stick spray on cookie sheet or aluminium foil laid on top of thick towels.
- Once mixture boils, stir in butter, walnuts, spices and honey. Continue to heat, without stirring, until between 235 to 240 degrees F. (113 to 116 degrees C) Recommended you purchase a digital thermometer-great investment!
- Once temperature has been reached, remove from heat and let cool 5 minutes.
- Beat until thickened until liquid poured from wooden spoon starts to pour slowly.
- Immediately drop by one spoonfull onto sprayed cookie sheet or foil.
- Let cool and freeze in small bags of 3 to 4 per bag. THESE ARE SOO GOOD YOU WILL NOT BE ABLE TO EAT JUST ONE!
MAPLE-WALNUT BLONDIES
An autumnal riff on classic blondies, these are a treat for the true maple fanatic. - Heat the oven to 350 degrees. Grease an 8-by-8-inch pan with butter and line with parchment paper, leaving overhang on two sides.
- Make the optional maple nuts: In a small sauté pan, heat the walnuts, 1 tablespoon maple syrup and a pinch of salt over medium heat. Cook, tossing often, until the nuts are lightly toasted and the bottom of the pan looks dry, about 3 to 4 minutes. Transfer the walnuts to a cutting board to cool, roughly chop, and set aside.
- In a large bowl, combine the 1/2 cup butter, brown sugar, 2 tablespoons maple syrup, egg, vanilla and bourbon, if using, and whisk until smooth. Add the flour, salt, baking powder and nutmeg, and stir with a wooden spoon until just combined.
- Transfer the batter to the prepared pan and smooth with a spatula. Sprinkle the walnuts, if using, evenly on top. Bake for 21 to 23 minutes, until the bars are just starting to brown at the edges. They should seem slightly underbaked and will firm up as they cool.
- Sprinkle the blondies lightly with salt, allow to cool to room temperature in the pan. When completely cool, remove from the pan using the parchment paper, then cut into squares and serve.

Immediately stir in nuts and maple flavoring. Beat vigorously with the wooden spoon until candy is just beginning to thicken, but is still glossy. This should take 3 to 4 minutes.
- Quickly drop the candy from a teaspoon onto a baking sheet lined with parchment or waxed paper. If the candy becomes too stiff to drop easily from the spoon, stir in a few drops of hot water. Store tightly covered. Makes about 24 pralines.
