GARLIC ROASTED CARROTS
Fresh garlic and garlic powder each bring slightly different notes to this roasted carrot recipe. These are addicting, so you might want to double the recipe!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Slice carrots on the diagonal into 1/4-inch slices and place into a bowl. Drizzle with butter and stir in fresh garlic, garlic powder, salt, and pepper. Spread onto the baking sheet in an even layer.
- Roast in the preheated oven until carrots are lightly caramelized and soft, 20 to 22 minutes. Sprinkle with parsley.

- Place carrots in a Dutch oven; add water to cover. Bring to a boil. Cook, covered, 15-20 minutes or until very tender. Drain carrots; return to pan., Mash carrots with remaining ingredients by hand or puree in a food processor until blended.

- Peel and roughly chop 2 pounds carrots. Cook in boiling salted water until soft, about 20 minutes; drain. Puree with 3 tablespoons olive oil; season with salt and pepper. Warm 1 tablespoon olive oil with 1 teaspoon each grated ginger and orange zest; drizzle over the mash.
- Use a food processor or immersion blender to puree these veggies-they're too fibrous for a potato masher.

I came up with this alternative after trying ladypits wonderful mashed spiced carrots recipe #75554. I was delighted by the taste and texture and wondered how it would be with a more savory flavor. This is a hit for me as well. I liked them both so much I have made extra to feed to my freezer.

Steps:
- Steam the carrots until cooked through (I usually like them crisp in the center, but that will not work here).
- Mash the carrots with a fork or potato masher and add the roasted garlic.
- Add the stock and the thyme and mix well.
- Add your salt and pepper to taste.
- Simply multiply recipe for bulk/freezer cooking.

- Cut carrots and boil in salted water until tender.
- Transfer carrots to mixing bowl, add 6 ounces (1 1/2 sticks) of butter, salts, sugar and whipping cream. Mash as you would for mashed potatoes.
- Place mashed carrots in 13 X 9 pyrex dish.
- Cut 1/2 stick of butter into pieces and place on top of carrots.
- Top with crushed Ritz crackers.
- Bake at 350 degrees for 25 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Stir olive oil and garlic salt together in a small bowl; pour into a large resealable plastic bag. Add carrots to the plastic bag, seal, and shake to coat carrots completely in oil mixture. Arrange coated carrots onto the prepared baking sheet.
- Roast carrots in preheated oven until crisp-tender, about 45 minutes. Sprinkle 1/4 cup Parmesan cheese over carrots and continue roasting until cheese is lightly browned, 5 to 10 minutes. Garnish with additional Parmesan cheese to serve, according to your taste.
