Steps:

  • Combine corned beef, potato, cabbage, carrot and onion and shape into patties.
  • Melt butter in a heavy skillet, add patties and saute until heated through and browned.
  • Combine mustard and horseradish and serve with patties.

1 cup finely chopped cooked corned beef
1 cup mashed potatoes
1 cup finely chopped cooked cabbage
1/2 cup mashed cooked carrot
1/4 cup minced green onion
butter or bacon drippings (for frying)
1 cup stone ground mustard
2 teaspoons prepared horseradish

Steps:

  • In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; break into small crumbles. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.

Diabetes was new to our household so this is one of the many we tried that the whole family now enjoys.The portions have been adapted to accomodate a family but can be halved for a single pie.Original from "Make a Joyful Table,main dishes to delight the soul."The premade shells are a time saver and a great help for those who are "pastry challenged"If you want to cut down the fat you can make the pies deep dish with only a top crust.

Steps:

  • Preheat oven to 350 degrees.
  • Take pie shells out of boxes to thaw.
  • Meanwhile,spray a large skillet with butter flavoured cooking spray, brown the meat and onion.
  • Stir in the cabbage.
  • Add tomato sauce, Brown Sugar Twin,parsley, and black pepper.
  • Lower heat and simmer 15 minutes.
  • Put half of mixture into one of the pie shells and wet the top edge of the shell.
  • Pick up a second shell,invert the tray while putting your hand underneath touching the pastry to support the shell as it comes away from the tray.
  • Lay second shell directly on top of of mixture in first shell.
  • Use damp fingers to seal two shells together.
  • Flute edges.
  • Make about 8 slashes on top to allow steam to escape.
  • Repeat filling the third shell and covering with the fourth shell.
  • Check to see that your edges are sealed and for the steam vents.
  • Bake for 30-40 minutes or until crust is golden brown.
  • Place pie plate on wire rack and let set for 5 minutes.
  • Cut into 8 servings.

Cabbage-Filled Pastries image

Steps:

  • Heat oil in a large nonstick skillet over medium heat. Add onion, and cabbage. Sprinkle with brown sugar, lemon juice, dill weed, salt and pepper.
  • Cook, strirring frequently, about 8 minutes or until tender. Stir constantly toward the end of coooking time to keep vegatables from sticking. Remove from heat and let cool 5 to 10 minutes.
  • Preheat oven to 400 degrees. Have an ungreased baking sheet ready. Separate biscuits and place them between two sheets of wax paper several inches apart. With a rolling pin, roll biscuits into 4 to 5 inch circles. Carefully remove the top sheet of wax paper.
  • Using a heaping tablespoonful of filling, place slightly off-center on each circle. Carefully fold biscuits over, making a half-circle and stretching dough gently over the filling. Crimp the edges together with a fork. Place pastries on baking sheet.
  • Bake 8-10 minutes until golden brown. Serve hot or at room temperature.

Bierocks (German Meat Turnovers) image

Steps:

  • Saute beef, onion and garlic, salt and lemon pepper in a large skillet over medium high heat, until beef is browned. Add cabbage, Worcestershire sauce and caraway seeds. Cook until cabbage is limp; drain liquid from mixture.
  • Preheat oven to 350 degrees F (175 degrees C).
  • On a lightly floured board, roll each loaf of dough into a 12 inch circle. Cut each circle into 6 wedges. Spoon cabbage/beef filling onto center of each dough piece, dividing equally. Pull three points of each wedge up to the center and pinch to seal. Place bierocks on a lightly greased cookie sheet. If desired, brush dough with melted butter or egg wash (1 egg white with 2 tablespoons water).
  • Bake in preheated oven for 30 minutes, or until golden brown. Serve hot, or wrap and freeze for heating later.

This recipe was given to me by my Aunt, Carol Cron. My Great Grandfather Tretheway loved meat pies, and this recipe has been with us forever. You can use round steak if you wish. You may also make 1 large pie rather than 5 pasties.

Steps:

  • For the pastry.
  • In a large mixing bowl stir together thoroughly the flour and the salt.
  • With a pastry cutter cut in the shortening till the mixture resembles coarse crumbs.
  • Using the 7-8 T.
  • ice water gradually all to dry ingredients, 1 T.
  • at a time, tossing the ingredients with a fork till the mixture holds together.
  • Form into a ball.
  • If desired, cover and chill the dough 1 hour.
  • Meanwhile, prepare the meat-vegetable filling.
  • Peel and coarsely chop the potatoes.
  • In a bowl combine the cubed corned beef, chopped potato, cubed turmip or carrot, onion,, salt and pepper.
  • Set aside.
  • Divide the dough into five equal portions.
  • On a lightly floured surface roll out each portion of dough to a 9 inch circle.
  • Place about 1 cup meat vegetable filling on one half of each circle of dough; fold the pastry over the filling to make a half circle.
  • Using tines of a fork, seal the pastry edge.
  • Cut slits in the pastry for escape of steam.
  • Carefully transfer pasties to an ungreased baking sheet.
  • Bake pasties at 400 degrees till golden brown about 45 minutes.
  • If desired, in a small sauce pan combine 1/2 cup ketchup with 1/4 cup water, heat through.
  • Serve with the pasties.

Meat and Cabbage Pasties image

Steps:

  • In large skillet, crumble meat. Stir over med-high heat until meat begins to brown. Push meat to one side of pan and drain fat.
  • Add chopped onions and garlic to the meat. Continue cooking until onion is limp, but not browned.
  • Add cabbage, 1/2 cup water, beef buillon cube, oregano and cumin. Stir.
  • Cover pan, reduce heat and simmer until cabbage is tender and juices have cooked away, about 20 minutes. Add salt and pepper to taste.
  • Dissolve yeast in 1/4 cup of the warm water. Let stand 5 minutes.
  • In large bowl of electric mixer, combine remaining water with salt, sugar, shortening and eggs. Add yeast and two copy of the flour. Beat on medium speed for about 5 minutes, scraping sides of bowl several times.
  • Cover bowl and set in a warm place until mixture is bubbly, about 30-40 minutes. Put bowl back on heavy mixer and add 4 more cups flour, one cup at a time. Or you can do this by hand. Knead until soft and resillient, but not sticky, about 5 minutes, adding remaining flour as needed.
  • Place in greased bowl, turn over, cover and set in warm place until almost doubled, about 1-1 1/2 hours Punch down dough and cut in half. Put one half back in the bowl and cover.
  • Roll the other half of the dough on a lightly floured board into a 12x24 inch rectangle. Cut into 8 pieces, each 4 inches square. Repeat with remaining dough.
  • Place about 1/3 cup of the filling on each square. Bring opposite corners of each square to meet in center. Or, you can make it a triangle and pinch 1/4 inch of edges, with water if necessary, to seal. Press with tines of a fork to get a good seal.
  • With spatula, transfer each to a greased baking sheet, placing about 1 inch apart. Cover lightly with plastic wrap and let stand in warm place about 20 minutes.
  • Unwrap and bake in a 375F oven until golden brown, about 30 minutes.
  • Melt tops with melted butter and then let cool slightly before serving. Can be served at room temperature.
